I have spent decades working with pork in my kitchen. I have babied and coddled it: baked, fried, simmered, and smoked it, burned through cookbook pages and my mother’s memory in a vain effort to deliver up pork that - I have just discovered - Bill’s BBQ in Metropolis, IL, turns out on a daily basis. Bill’s is locally owned (by Bill, naturally) and operated by Bill, his sister, father, and nephew As a rule, I balk at less than full service restaurants but the BBQ was so good, the restaurant so bright and cheerful, and Bill’s sister was so helpful reviewing the menu choices and keeping my tea refreshed, that placing my own order and getting my own iced tea was a small price to pay, and I have now scrapped my preference for being waited on hand and foot. Bill’s is located on Hwy 45, a scant ten minutes from I-24. I have passed it many times on the way to Harrahs Casino, but recently got so many “you gotta go to Bill’s” that today I finally did. One friend said the pork chop sandwich was the king; a second said the BBQ chicken was the absolute best; and a third said Bill’s cooks up a mean cheeseburger. Alas, I got there too early (10:30 a.m.) for the BBQ chicken special so went with the pork BBQ sandwich. It smelled so good and I was so hungry, I forgot to take pix but I’m going back and will post one or more at that time. Bill’s isn’t open evenings and is closed Sunday and Monday (see attached menu) but specials are: Tuesdays & Thursdays – Pork Chop sandwich; Wednesdays & Saturdays: BBQ chicken and Fridays & Saturdays: BBQ ribs. You can get BBQ pork sandwiches, BBQ ham sandwiches, cheeseburgers, hamburgers, and even breakfast sandwiches any time. Sides include the usual suspects. For years and years it has been a tiny place that did mostly takeout business with a couple of small tables available inside. Last fall the new owner moved into the old KFC building and has greatly expanded the menu while keeping up same quality and small-town atmosphere and service.
