Kaiju is hands down one of the best bars I’ve been to in a long time. It’s not a flashy overcrowded space it’s intimate and unique, if that’s something you are into or wanna try a different speed. It’s on the second floor of the Citadel, if you’re in the food hall you can’t miss it because it’s above you with red lights!! The vibes are immaculate and the bartenders are incredibly talented but also such kind individuals.
We originally were recommended from a cool staff member at Citadel (s/o Jessica) who told us to try the “banana drink” which is the Godzilla, which they didn’t have at the time, but it was all good bc the owner (who we didn’t know was the owner until after a lovely convo) recommended my friend and I two drinks. We first had the Chupacabra & the Sinsimito and god*mn those drinks were sensational!! So we of course got more!
The entire space is uniquely decorated by local Miami artists & the owner is a Miami native which as a fellow native means a lot seeing local talent showcasing their craft.

Read moreThese guys are the best group of, well, I think it would be doing them a disservice to call them bartenders. They're more like mad scientists cooking up cocktail concoctions that you and I would never dream of. Delicious ones at that.
They literally use a chemistry set in the kitchen to extract components of an ingredient to either enhance the flavor of it, or isolate part of it to give you a taste of something completely new.
My favorite example of this is them isolating and extracting the capsaicin, not to be confused with capsicum, from hot chili peppers. It give you a taste of something new AND it's only one ingredient in ONE of their cocktails.
Anyhow, I could talk all day about how amazing these guys are. They're the best group of fellas in hospitality that you could ask for. Great atmosphere, beautiful decor and a loyal, local fan group and customer base.
My only request would be they go full tilt and wear labcoats cause they're the ones cooking up these...
