TL;DR Drive 2 exit down, and go to Sol de Mexico instead.
Usually we go to Sol de Mexico in Bellingham for our Mexican food but today I was looking for somewhere new to take my mom for her birthday, and after seeing this place had a 4.4 rating over 500 reviews on Google, I thought I would give this place a shot. To give this place a fair an accurate shot, I only ordered items I've had at the other restaurant.
Lets start with the free chips and salsa. The chips were flavorless, and somewhat a little hard, not sure if its intentional to give it extra structure for dipping/scooping, or it was just stale. The salsa itself needed a little work, wasn't great, wasn't bad, just meh.
Next is the guacamole. Maybe I've been spoiled, and am just used to fresh guacamole being made next to my table, but it feels bland and pre-made here. There was no option for how spicy I wanted it, and lacking much flavor.
For appetizers I also had the sample platter, which was just a mess, just chaos and disorder. The 1 cheese quesadilla cut up was depressing to look at. The mini flautas were alright, though it was so deep fried I couldn't really distinguish the flavors. The "buffalo wings" were just over cooked wing dings, no sauce. All this on a bed of that stale nachos from earlier.
Finally the entree, the 3 amigos combo platter, consisting of grilled steak, chicken, shrimp, rice, beans, and salad. The steak was so thin and well done, it was basically jerky. I've actually have tried my dog's jerky treat before, and that is more edible than this. My mom was having real hard time cutting through her steak with a steak knife. That was how bad it was. She ended up not eating it, and bringing it home to feed it to me dog. The chicken too was dry, and again over cooked, see a recurring theme here? The shrimp was actually edible and OK, though nothing to write home about. The Spanish rice reminded me of the rice they served back when I was in high school, some parboiled box stuff. It too was severely lacking in flavor. When you order this same dish at Sol de Mexico, it is MILES ahead in flavor and quality, the steak was actually steak. And they give you 3 free steamed tortilla with your meal.
People who praise this place for their big portions, are simply fooled by the presentation. The plates are humongous, and all the food on the plate is spread out, giving you the illusion that you are getting some tremendous awesome deal. Hate to break it to you, you're not.
Oh yeah, they were pretty heavy handed with my El Presidente Margarita. Normally that is never a bad thing if I'm at a bar or club, but it was hard to drink it and eat my meal at the same time. You either drink it first, or save it for the hand, but it was just too much tequila for it to go down with my food and still enjoy the food, which I didn't.
I cannot for the life of me see how this place is so popular and highly reviewed. They must have purposely and perfectly crafted their recipe for the local clientele, like this is what the dominant demographic in the surrounding area enjoys. If I was ever to dine here again, I would have to bring with me a bottle of MSG, and sprinkle it on everything to give it...

I felt it was moderately watery and lacked a certain zing or strong flavor. It did have some cilantro which was pleasant. I appreciate the fact that the waiter wasn't at all stingy with it and quickly refilled the container as we had eaten all of the first container. Read moreAcapulcos is excellent Mexican food most definitely to the area! I have serious food allergies with meat proteins, therefore I often get vegetarian meals. This particular dish that I got is one that I often do because usually it is really tasty. Unfortunately, this day, Acapulco's really went downhill with this particular meal. The spinach inside was very fibrous and made it very challenging to eat- not tasty at all. My friend's meal was excellent to her and her son. They got a steak stir fry and everything was cooked to perfection for them. Overall, there isn't a person that I bring there that doesn't love it. The meals are very large and affordable which us Americans really tend to overindulge with. I am sure that you also will have a really good experience at Acapulco's.
