Bub’s NOLA: A Smash-Burger Worth Seeking Out
On a recent trip to New Orleans in November, we told our son—our designated tour guide for the visit—that we wanted to eat where the locals eat. For lunch, he took us to Bub’s NOLA, a small burger joint on Bank Street, and it did not disappoint.
Bub’s is a no-frills spot with limited seating inside, but they have picnic tables outside, which made for a great place to enjoy our meal. Ordering is simple—you place your order inside, they call your number, and you pick up your food fresh and hot. And let me tell you, hot and tasty is exactly what we got.
The burgers here are smash-burger style, thin with crispy edges and packed with flavor. My wife went with the Bub Burger, a classic double patty with grilled onions, American cheese, B&B pickles, and Bub’s sauce. Every bite was well-balanced, rich, and satisfying. My son opted for the Bleu, You’re My Boy! burger, stacked with Bleu cheese crumbles, bacon, buffalo sauce aioli, red onion, and lettuce. The combination of the funky cheese, smoky bacon, and spicy aioli was spot on—bold but not overwhelming.
I decided to take a gamble and ordered the Peanut Bubber, which got a few skeptical looks from my family. It’s a double patty with American cheese, crispy bacon, and a generous slathering of creamy peanut butter. I know it sounds strange, but the mix of savory beef, salty bacon, and nutty peanut butter actually worked. It was an unexpected but enjoyable twist on a burger.
To round out our meal, we shared the fries, which were thin, crispy, and served hot. I also tried the fried Brussels sprouts tossed in a sweet Sriracha sauce—perfectly crispy with a great balance of sweet heat.

I personally love both smash burgers and big juicy burgers but picked this place for my son who only likes the thin crispy burgers. The bun is firm enough to hold up unlike lots of places with smash burgers that have buns that soak up the grease - this burger was not greasy! It was also toasted slightly and with a double, it was the perfect bun to meat ratio. They have both cheddar and American so another win for me and my son because he prefers American and I prefer cheddar. I tried the Bub's sauce on the side and found myself dipping even though I normally take my burgers without condiments. Next time I want to get the grilled onions. We shared a cheese fry and that was nothing to write home about but certainly not bad - it came with skinny fries topped with melted cheddar and a mild cheese sauce. They also had glass bottle Cokes. Service was excellent, bathroom was clean, and the place was adorable inside and out. They have a bunch of video game machines inside and a mural by my favorite local street artist, Mr. Balloon Hands. I live across the lake but this will 100% be my go to burger place for smash burgers (for a thick juicy burger, it's Beach Corner) in the city. Read moreAll I can say today is … wow. And I don’t mean that positively. I’ve been to Bubs a few times before this a while back and today… the food was horrible. The fries were very cold and very salty. And the burger was very very VERY dry - and I ordered a burger that came with sauces (spicy mayo). If you ask anyone that really knows me, I almost never use ketchup for my burger or fries. But I had to add this when I finally got home. I couldn’t eat it without.
I am highly upset because I didn’t check my bag before leaving. If I had, I definitely would’ve asked for a remake. Because I know you all can definitely do better. I tried calling a few times to no avail.
My guess is they’re putting their all into the Freret location with it being so new.

To owner: Do you have no recourse for this? Did you not see the pictures? All you can do is make a condescending, backhanded apology? How about offer a remake next time? Look at the other pictures of the great food being served and look at what I was provided. You owners often forget that you don’t give people free food.
