We visited Gopchang Story branch in New York. We liked it so much, we visited multiple times while we were there. When we heard a branch will start in Chicago, we were so excited. Unfortunately, we did not have the same experience in this branch. But I want to point out that the food was very good. And I really want this branch in Chicago to succeed.
Here are some suggestions for improvements. We visited the restaurant as a group of 5 adults. We spent close to $300 (no alcohols), but we were not full. The amount of gobchang seemed significantly less that what I remembered from New York. My first suggestion is to increase the quantity by about 20%. Don't skim on the meat. You may save some money in the beginning, but you'll lose customers quickly in the long run. We loved fried rice in New York. It had eggs, tons of cheese, and dry seaweed along with plenty of other vegetables. However on the Chicago branch, there was only dry seaweed and just a bit of vegetables. Extra fried rice on the table was pretty expensive per order, and once again, I feel like you shouldn't skim on these extra ingredients, as it makes a huge difference in terms of presentation and experience for the customers. (In New York, fish eggs were extra, but I don't think you need that option) I know it's hard to find employees these days, but you really need to find more servers somehow. We felt bad asking even for water because our server was so busy serving many tables.

On my initial visit, shortly after their opening, they didn't have a liquor license to serve soju, which was a letdown, compounded by the subpar quality of food and service. Hoping it was just teething issues, I decided to give them a second chance, especially since enjoying gopchang without soju felt incomplete. Unfortunately, my second experience was equally disheartening.
Food: The side dishes were limited and served in meager portions. The buchoo (chive) salad was thick and tough. It seemed like they used a variety of chive more common in Chinese cuisine, which is thicker and less delicate than the fine, tender Korean chives, which I believe would be more appropriate. When the assorted gopchang (grilled intestines) dish arrived, the initially served rice cakes were hard and seemed underheated. The daechang (large intestines) were exceptionally tough, unlike any I've had before. The gopchang was somewhat palatable, but that's about it.
