The first thing that you need to know is this is a food truck as that was not super clear from their description. Once you get past that then the food is actually quite great. I am a pure vegetarian who appreciates spicy food. I do want vegetables in my Mexican food which many Mexican places, quite frequently do not put enough of as most Mexican food is meat based. Thankfully, the owner explained to me that every single menu option can be customized to be fully vegetarian. Not only that, he assured me that all the items, including rice and beans, did not have any meat or meat extract. I ordered two burritos and a quesadilla. They put a lot of vegetables in the burritos and thankfully in the quesadilla as well. Many Mexican restaurants will make a quesadilla almost entirely out of cheese. However these guys put chopped lettuce, chopped cabbage, tomatoes, grilled onions, sliced radish, sour cream and other goodies in there which made the quesadilla really yummy, filling and healthy overall. My family loved their salsa, green and spicy red. Read moreAnother taco review for Pasco. The food is... Eh? It's not bad, but it lacked flavor and the sauce was watered down with no spice. I was told that the meat was seasoned in house, but with those two elements missing (good seasoned meat and a spicy flavored salsa) you will genuinely seize to stick out from the competition. I also ordered tacos de tripa and they sure disappointed. Lastly, I was told that la agua de Horchata was hand made. Couldn't be further from the truth. Definitely a powder based version of the real thing. One thing I do want to highlight is how friendly the service was (hence the 3 stars) it does help, but when it comes to the food, it falls short of all expectations.
