My husband and I read through the reviews before picking some up, and we honestly laughed at the reviews giving 1 star because the jars were hard to open ... but then the jars laughed at us. No amount of knocking or tapping did anything - those things are sealed tight.
Here's the important takeaway: Take a spoon and wedge it under the lid (using the tip of the actual spoon, not the handle). It doesn't need to go very far under and it shouldn't take much effort.
