While the pho definitely DOES taste good, I have had pho in different restaurants in Pittsburgh as well as in different parts of the country. The food is good, but it is not as good as I have had elsewhere. When I typically eat pho, I cannot put it down. It may be my favorite dish across all types of cuisine. I add the typical sauces which they have on the table just the same as I would elsewhere, but the broth isn't quite the same. I have never ordered the shrimp pho hear but from the feedback I have heard from people who have gone with me, it is very very pungent and extra shrimpy (likely due to very fresh ingredients) so if you prefer a more subtle shrimp taste, I'd advise ordering a different protein.
Usually when I order beef with pho, it cooks inside the broth and is extremely tender but that isn't exactly the case here. Also, I truly hate to be that American to complain about portions but I really love bean sprouts and they probably give you about 1/3 of the vegetable portion that I've received everywhere else. I always ask for extra sprouts and thai basil here which they do happily provide, but I feel bad to ask for it and I'm not sure if they charge for that or not. The spring rolls are perfect, as is the peanut sauce 😋
I'm not sure what exactly is missing from this pho for it to earn 5 stars from me personally, but I just feel like something is missing. Some sort of spice for the broth I think? I hate to offend so I really do need to stress, this pho is still DELICIOUS and I have been here more than once, like I said I just find that it is missing something for me, personally.
I do feel bad to say that because the ladies here are just SO SO nice and sweet and helpful, it would probably be a good place for first time pho eaters as I have a feeling they would assist you if you aren't quite sure how to prepare it or you feel a bit intimated by the dish, as some do. I would still recommend Pho Van to others and I'm sure I will return. They will also provide containers fit for taking the rest of your pho home with you!

Quiet Easter Sunday in Strip District but not Pho Van. There was lineup outside of the restaurant. In my mind, it’s gotta be good. I went in the restaurant and checked myself in. There were few people waiting before me. Waited almost 25 mins. It’s weird that they didn’t sit us in when there was a table for 4 people. I asked the staff and they said there was one person in front of me. So, it doesn’t make sense to me if you want to sit 1 person at a 4 people table. anyway, that person got another table and I sit at the table which was ready 10 mins ago. ————- Pho: It’s very pricy comparing to Toronto (i know I can’t compare but still…). A bowl of Pho cost me $18 USD (~$25 CAD) and it’s only one size.
Soup base was nice. No heavy MSG. I ordered eye round pho. Portion was ok (Large size in Toronto), meat portion was just ok. I expected more for this price. The noodle was thinner than Toronto. It was nice.

It's a nice place to live, I suppose but not very interesting when it comes to diversity in culinary choices. We were thrilled last summer to take a ride into town during our visit. My wife wanted to show me the Strip District - a shopping area with ethnic grocery stores, plus other shops, and an array of restaurants. As soon as we arrived we were hungry. We immediately spotted Pho Van, and were so excited to introduce her parents - who were skeptical - to Vietnamese cuisine. My wife ordered the pork chop over rice noodles and greens, and ordered the same for her mother. Her mom is not the most adventurous of eaters, but loved this dish so much she practically chewed the plate. I ordered what turned out to be a delicious bowl of beef pho. Her dad got some other noodle dish that he also greatly enjoyed. I'd like to say that her parents have started eating Vietnamese on a regular basis, but I would be wrong.
