Carbone's Pizzeria - St. Paul — Restaurant in Saint Paul

This restaurant has been here since County Market and the Glass Bar were down the street. I have fond memories of our family walking here quite regularly because it was a family favorite. I would pat all of the round stone/pieces on the building like they were pizza dough...all the way to the door. We moved states away after high school and hadn't been here since then. I have recently moved to the area and wasn't sure if Carbones was still gonna be here because mostly everything is different. Twenty-five ago, I patted my first pizza dough rock. Twenty-five years ago, I held my little brother's hand while we sang songs or played ispy...with the sunshine on our faces and a gleam in our eyes...we walked as a family to what became our favorite pizza place. Twenty-five years later, I walked into the same Carbones, with the same pizza dough rocks on the building, that still have the most delicious pizza that is by far the best around.. is still my favorite. I actually ordered here frequently, not anymore. I think the company should obviously change the hours of operation. I ordered here last night, and I normally call the same time, on the same days, which is 9:30pm. When I called at 9:30pm (10:00pm close time) the employee told me they were backed up and shutting down the ovens early. Does that make any sense, they are backed up and shutting down the ovens early? I told the the employee the hours of operation stated they were open till 10pm and I heard a "Thank you" Click. Um, come on now,....... I worked in the service industry for over 10 years, and never, ever, has a company I worked for shut down early because they were busy. In fact they usually would extend the hours of operation and shut down later. I don't even care, but the blatant lie " We are backed up so we're shutting down the ovens early" and the phone hangup was enough for me to write this. Whatever Carbones, can't handle the business shut down before the hours of operation is...

First of all, I am a lifelong Carbones fan and ALWAYS order the same pizza - PSM! That said, I cannot order from this location any longer :( For some reason, they have decided to change to fresh mushrooms at this particular location - a location one could argue is the original and the best. Before anyone attempts to food shame me for a different view and insist that fresh is better, know that Carbones WAS NOT BUILT ON FRESH MUSHROOMS! Decades of canned mushrooms were good enough until now!?!? I not only have eaten Carbones for decades, but family members (including me) have worked at various locations off and on for over 30 years because we love this pizza! Is there a reason someone decided to mess with perfection? Ok, fine, go ahead and offer fresh mushrooms if you must, but allow those of us who grew up on your pizza and eat it 2 or more times a month to get what we loved!!!
