Grew up a few minutes away from the original Trapper’s location (known then as Sushi Town) in Bonney Lake. Was always my favorite sushi restaurant and I’d missed it often since moving to Texas..
Fast forward to today when I finally made it down to SAT to try the Texas version of Trapper’s and Oh Boy! was it an experience!!
Dunno what Trapper O’Keeffe has been up to this last decade (other than massively expanding the company footprint) but holy crap was it worth it. Every roll I was familiar with, including my original favorites the Trapper and Bonney Lake rolls, were revamped and refined to crispy, succulent, airy perfection so far beyond the world class deliciousness they’d already encompassed. Same goes for old standbys the Timmy and Smurf rolls which blew our socks off
But then what really caught me off guard was new additions like the Vader Roll. It feels like the father (maybe hence the name) of the Trapper Roll and I can say with utter certainty that it was the finest sushi roll I’ve ever eaten out of thousands around the world
Trapper is a genius beyond compare, nobody designs sushi like him (though he maintains humility even now in honoring his original sensei). I was so pleased to see that he’s not only kept his best-of-the-best quality but actually exceeded it in his latest incarnation. Will be travelling down to SAT literally with the main purpose of visiting this location— and badly hope he opens another closer to Austin!
Massive and important shout out to the staff too who were attentive, kind, and spunky— they were a critical component of the experience. Thank you Kayley for 5-star service. Trapper has always hired the very best in every location I’ve visited but these girls and guys were a cut above even that high standard

Read moreI can't say enough good things about Trappers Sushi Co.! My daughter chose this place for her 12th birthday dinner, and I’m so glad she did. From the moment we walked in, the atmosphere was warm and inviting, with a modern yet cozy vibe that made the celebration feel extra special.
The real stars of the night were Christian, our sushi chef, and our server Maddie. Christian was an absolute artist! He crafted the most incredible sushi rolls right in front of us, and his attention to detail was unmatched. Every piece was fresh, flavorful, and beautifully presented. He even took the time to explain each roll to my daughter, making her feel so special on her big day.
Our server Maddie was equally amazing—attentive, friendly, and went above and beyond to make sure we had everything we needed. They even brought out a small dessert for my daughter with a candle to celebrate her birthday, which was such a sweet touch.
The food itself was out of this world. We tried a variety of rolls, and each one was better than the last. The flavors were bold and balanced, and the ingredients tasted incredibly fresh. My daughter couldn’t stop raving about how much she loved her meal, and I have to agree—it was one of the best sushi experiences I’ve ever had.

...and then there is Sarah. Her low quality service is only eclipsed by the underhanded tactics she uses to buoy her tip margins.
I am hoping this review reaches you to inform about the waitress named Sarah, whom I have had on two separate occasions up-charge me for services that were supposed to be included in the all you can eat package.
The first occasion she up-charged us to the dinner menu during lunch, even though we didn't order anything that wasn't on the lunch menu. She then charged us for drinks and gyoza that were supposed to be included in the all you can eat package. Our bill rose from $45 to $65 before tip.
The second instance she turned a $65 dinner bill into $100, again itemizing appetizers and items that were on the all you can eat dinner menu. It's ultimately a very dishonest tactic and it ruins the experience for one of our favorite sushi restaurants.
If you go to the Culebra location, request to be sat with anyone else but Sarah. She will do her best to line her pockets at your expense and provide you poor service in...
