We had been counting down the days until Dos Burros opened, and when it finally did, it did not disappoint. We are frequent diners at Hero Ranch Kitchen (HRK), so we knew it would be amazing.
We've only been once, but are planning to go back again this week. Alan, the manager of HRK, Flowers, and now Dos Burros, stopped by our table for a chat, which was really nice. Before we left, Angelo, the owner also stopped by for a quick hello and to make sure we'd had a good experience.
The service was great, the food was amazing, and the ambiance (including the music) was relaxing and enjoyable. The menu is still apparently limited, and will be expanding soon, but we found plenty of options. The shrimp and tomato ceviche was outstanding, as well as the trio of salsas and chips. The chips are perfect. For our entrees we ordered the steak and chicken fajitas, which were the best we've had in years.
I recommend making a reservation. We went on a Tuesday night and it was very busy.

They brought all the starters at once so, some of them got cold. That was our fault, it is better to tell them to pace them out. And they also brought some of the entrees first and others later which shows the kitchen is still a little disorganized. They will get better.
