My first two or three visits to Kucu were excellent. I couldn’t say enough good things about this restaurant and referred everyone I talked to to try out this new restaurant. Sadly, I feel this place has slipped in the past 3-4 months. For example, I took a family member to eat here and told her the pork chop was very good. She ordered it and the there was hardly any seasoning on it and it was dry, and the rest of our meals were average. Nothing memorable. It was such a disappointment. Tonight we visited again hoping our previous visit was just a one-time bad experience, but unfortunately it wasn’t. I ordered a margarita that was supposed to come with an edible flower. When it came there was no flower. It’s certainly not a deal breaker, but when I laughingly mentioned it to the guy who served the drink he kind of flippantly said they were out. No big deal, but the mood seems to be a trend with the waitstaff on this visit. My husband and I both ordered the fajita wrap and when it came it just had sauce and fajita meat. It was supposed to also have onions and peppers as well. I let our server know the wraps were missing the veggies, but otherwise they tasted good. He said he would give the chef a heads up for the next time he makes the wraps. I was hoping our bill would reflect the fact our food was missing major ingredients, but it did not. For the price we are paying for our food, I would expect more consistency and attentive, caring waitstaff. I still would like to give Kucu another chance, but if I go a third time and the food and service aren’t up to par, I will be very hesitant to return and I will no longer refer other people to this restaurant. I gave two stars instead of one in hopes things will improve and the quality will be consistent instead of a hit or miss. I have high hopes for this place because it has such great potential. Kúcu is the culinary counterpart to the Indigo Hotel in Silverthorne, CO and represents a branding campaign that is meant to appeal to those to an upper-class clientele, or at least those looking to live that life while visting the Colorado Mountains. It's fancy yet affordable, posh yet accessible.
As a rule of thumb - when I walk into an empty restaurant during prime hours, I usually leave. However, Kúcu is located in a posh ski town with plenty of options for visitors. It is unlikely that guests have come all this way to eat at the same hotel they're staying at, especially with Frisco, Dillon, and Breckenridge all less than 15 minutes away.
The atmosphere is great at Kúcu, and the staff is well-trained and attentive. There was more staff than guests for the first hour, and the drinks came at a snail's pace. I've worked in enough bars in my youth to know that this is part of the "pacer program" that aims to keep the discounted liquor steady and avoids anyone taking advantage of the happy hour.
If your goal is to drink so much that you can't safely drive home, this is a great option. If however you didn't come all this way to sit at the hotel, you'll find many more options just up the highway in...

I shouldn’t have to scoop out ceviche in a bowl of line juice and pour it in my chips. I should just be able to dig in. All I could taste was lime. The taco was quite good, the service was friendly and the margarita was pretty good for a house marg. Cool atmosphere as well.
Update: my wife being a tequila lover wanted to try it for dinner. I had to actually send back for new bacon, seemed like I had precooked bacon from earlier in the day and they tried to drop it in the frier “to crispy it”. They were out of numerous options for drinks. Service was slow but however the staff was incredibly friendly and very polite and accommodating.
