Great concept, poor execution.
This place is new and has a lot to figure out before it's an enjoyable experience to grab dinner here. Right now it feels like nothing more than a facade meant to siphon money from ski traffic. Expect to spend $20/head before any beverages.
Food - During peak hours expect a 10+ minute line to order anything and then another 10 - 30 min for the food to come out.
Overall excellent pizza, was the saving grace of the night. Pretty pricey (again $36 for 1 personal pizza and a side) but great quality.
Chimayo was a bummer. We LOVE their other location, but they have not figured out how to run this one yet. It's got a 50% markup from their other location a mile down the street and took 10x as long for the food to come out. Quite literally 10x. 3 Baja fish tacos took 30 mins after ordering.
Drinks - this place holds several hundred people and has 1 - 2 bartenders doing everything. Drink line was 10+ minutes long the entire night. Put it together: two rounds of drinks will cost you 20+ minutes of standing in line. It just doesn't work.
In summation, this place needs a serious tune-up. Definitely NOT a place for locals. $55 for two self service entrees and a side (no drinks) with a 45 minute wait.
Would be a huge improvement if it adopted the model like Milk Market in Denver. You sit at a table and order food from your phone (table specific qr code) from any of the restaurants in the building and the food gets run directly to your table. It didn't make sense that I had to wait 10 minutes in line at the pizza shop just to order from a self service terminal... I can do that online from anywhere.
I had high hopes for this place opening and our first experience was a nightmare. Will be at least 6 months before I give this place...
Read moreI have been visiting Bluebird Market since the beginning. Normally a pleasant experience, but last night wow. We love to go see all the new restaurants that turn over often. We went a few weeks back to the Deli, I am an East Coaster..love a good sandwich.. This place was fantastic, no skimping on the meat and you feel like you have had substantial meal at a good price Then last night we went for the new burger place. Disappointing the say the least. Having to pay a $1.00 for lettuce Tomatoes and onion..WOW! $42.00 for 2 burgers..Frozen patties!! I could spend this on the mountain and it would be better. I went to the bar wanted to check out the changes, since the no longer sell liquor. There were 3 ppl at the bar! I stood there and stood there...never even got acknowledged by the bartender. Now if the bar was packed I would understand. Literally 2 ppl sitting at the bar, the 3rd was either a friend or something. Read moreI already ate at Lazo's empenadas, and that was lacking, so I was hoping this place would make it all better. I ate at the Hook + harvest and ordered the Greek Salmon bowl. I saw it was a "honey smoked salmon" and though that was interesting and figured, let's do it, $16 for a salmon bowl was a decent price, what could go wrong? Well, while I was eating this thing I realized why I never see smoked salmon outside of camping; the reason it's smoked and not a grilled/baked salmon? That would require a more expensive protien from their supplier. It DIDN'T WORK. This confirmed that this place isn't for people that know food, it's for people that don't know any better and can't go to an Olive garden becuase they don't have one up here in these communities. I've been to one of these community market concepts in CA and it worked. This one here in CO needs an overhaul to cater to a more well rounded palet.
