I travel frequently for work and usually depend on a hotel restaurant so I don’t have to go out after long days. Unfortunately, my experiences at the 1854 Grill have been very disappointing, specifically with one bartender, Seth. On multiple occasions, his service has been extremely unfriendly and unprofessional. For example, he has taken a very long time to acknowledge me, even when there were only a few guests at the bar. On one visit, when he finally came over, he tossed the coasters toward me rather than placing them down. He also walked past me several times before offering another drink, and when I ordered food to-go, it took nearly 30 minutes and ended up being the wrong order which I didn’t realize until I got back to my room. As a Hilton Diamond member who travels often, I’ve never experienced this level of poor service. It honestly makes me dread going into the restaurant, which is unfortunate since I’m staying here for an extended period. After a long day, I just want a cold drink and a decent meal without hassle. On a positive note, I do want to recognize Jason (a newer bartender) and Jasmine (a waitress) who are both excellent—friendly, attentive, and professional. They provide the kind of service that makes guests feel welcome. Read morePreviously this was a 5 star review but I am coming back to revise it. I have gone to this establishment a few different times and I have some things I would like to change.
I still stand by my statement that the food is good and the hosts and server I've had were all amazing. The managers I talked to were all great.
If you're looking for good food and a nice looking place to take your family it still falls within those guidelines.
My reasons for changing from a five star to a one star may not matter to some of you but I am still going to put it as I personally think it will affect the restaurant in months to come.
Unfortunately higher ups have made decisions which will have negative impacts to how they will run day to day and I dont want to support a company who refuses to stand behind their own staff. As i stated the hosts, servers, kitchen staff, and the 3 managers i spoke to are not the problem. They have all been wonderful to my friends, family, and myself. The true problem is the higher-ups who only want to make money and drop anyone who asks questions that would benefit customers while making things run smoother. For this my friends, family, and I will not be returning.

The menu felt really limited, and while sometimes a simple menu can mean higher quality, that didn’t seem to be the case here. I ordered the coconut shrimp, which was fantastic flavor-wise, but the portion was disappointing. Only five shrimp for over $15. Not great value.
The burger was extremely underwhelming. It lacked flavor and was quite dry. Honestly, it felt like an afterthought on the menu. As for the mac and cheese, it was a letdown. For $26, the portion was surprisingly small, and the texture was soupy, more like cereal than pasta. It also lacked any real flavor, and I had to ask for their bacon aioli just to try and salvage it. Still didn’t help much.
One weird detail: the black fabric napkins they provided had a strong mildew smell. Not something you want to notice while trying to enjoy a meal and that your silverware was wrapped in.
