Summary (tl;dr): Above average AYCE sushi (considering how many AYCE sushi options there are in Vegas) at a good price without having to wait too long in a nice open restaurant that plays music way too loud.
I won't go into too many details for how AYCE sushi in Las Vegas generally works, but the price and the ordering here is on par with the good places (of which there are many) in the area. If you're not from here, there is no limitation on the ordering (looking at you Bay area with your ridiculous 3 items per order per person nonsense). There is technically a time limit but I don't think any place I've ever gone to in Vegas actually enforces it unless you sit there for like 3 hours or something.
Food (4.5/5): Great options, pretty quality items across the board. I've been a couple times and with AYCE places the rice quality can sometimes be a bit suspect, but for ITs SUSHI it's generally been at least acceptable/decent. For the fish to rice ratio, some places go overboard and give like no rice, while other places give too much rice - ITs SUSHI strikes a good balance. I don't have any specific recommendations regarding items but everything on the menu I've ever tried has been pretty good.
Service (5/5): Quick service, nice waiters and bus staff. They're quick with bringing out items too even if you've gone through a couple rounds. Not much else to say. It's an AYCE place you want the speed! The wait time to get seated is also on average better than the super popular places.
Ambiance (3/5): Ok so here is the one, pretty decent negative. The interior is pretty nice and pretty open. But the couple times I've been here they absolutely CRANK UP the music playing inside. I don't know if they always do this, but it's so high that it makes conversation a bit difficult. Otherwise though, the decor is fashionable and there is a section of an open kitchen that you can see.

If you've made it this far, basically this is my go-to place that strikes a good balance of food quality, menu options, price, and importantly not too bad of a wait time. It's my go to place whenever I feel like getting AYCE. The only thing is that while I swear I'm not 100 years old and go to bed at 5pm, I just wish they would turn the music...

The Lemon Salmon: A Fusion of Flavors
The Lemon Salmon at IT's SUSHI is an exquisite representation of the restaurant's flair for combining traditional sushi techniques with modern flavors. The dish is a visual and sensory delight. The salmon is fresh, with a buttery texture that melts in your mouth, indicative of its high quality.
What sets this dish apart is the delicate balance of flavors. The zesty lemon adds a bright, refreshing note, cutting through the richness of the salmon without overwhelming it. This is paired with a light drizzle of soy sauce that brings a depth of umami flavor, enhancing the natural taste of the fish.
Presentation: Art on a Plate
The presentation of the Lemon Salmon is nothing short of art. Served on a sleek, black stone plate, each slice of salmon is delicately placed, creating a beautiful contrast against the dark backdrop. The lemon zest and a sprinkle of finely chopped chives add a pop of color and a hint of freshness to the dish. In fact, it was so bad, they had to have their doors open to get the smell out. We almost left right then and there. But we were close to the door, so we could handle it. Unfortunately, we stayed to try the food. It was horrendous! The Miso soup sort of tasted like throw up. The shrimp tempura had so much tempera batter, we were trying to find the shrimp inside. Some of the fish that we were served didn't even look edible. So, we didn't eat it. In fact, we stood up in the middle of our meal and walked out! Even after complaining, the staff laughed at us and didn't do anything about it and thought we were the ones that were nuts. I'm not sure why other people were sitting down tolerating the smell of this restaurant, and eating the horrible food, but I can honestly say we will never return. There are just so many other fantastic sushi places in town that doesn't have terrible food and the staff treats you nice, this is not one we will ever consider again.
OLD REVIEW UPON OPENING: A nice new place for all you can eat sushi! Everything we had was, as a minimum, very good. We were very impressed with how fresh and tasty everything was. Very fast friendly service, too. The shrimp calamari is served with some sort of special house sauce, they wouldn't tell us what it was, but we suspect it might be sriracha sauce mixed with some sort of coconut cream. No matter, it was very good. The staff really knew what they were doing, and the whole place seemed to click very well. I suppose I could go on about everything we tried, but really everything we tried was very good to excellent. So, we...
