Costa Verde Grill & Ceviche Bar — Restaurant in Sterling

Great experience, would 100% comeback! Amelia took fantastic care of us, the manager was also very respectful and attentive. The host that sat us even kept us well entertained while our server ‘Amelia’ approached us.

We started with a Passionfruit juice and a Passionfruit Pisco Sour; both exquisite but the presentation (glassware) didn’t match the quality and standard set by the atmosphere and flavor. Aside of the glassware, the flavors specially the ‘Passionfruit’ pisco sour was amazing, great natural flavor, great texture on the palate and balance.

We “shared” the ‘Papa a la Huancaina’. Flavorful, potatoes cooked to perfection. It had a strong cheesy flavor, which I’m not used to but know it’s more know outside my hometown. Great overall.

For the main course we had the ‘Arroz con mariacos’ and ‘Ceviche a la punts’. Amazing flavor and perfect temperature on the shrimp and calamari, enhanced by the Rocoto sauce. The ceviche was recommended by Amelia for a standard ceviche experience, which was above standard. Great acidity level, amazing cinnamon flavored sweet potatoes. I literally scoop every drop of the juice.

We ended dinner with a Lucuma cheesecake. Creamy, sweet but not too sweet, I fell in love with it that I ordered some to go. My only recommendation is either taking out or replacing the bright red maraschino cherry. A dark cherry maraschino cherry may fit the color scheme better.

I did an online reservation for 2 for 7:45pm Saturday.. when I got to the place the host asked me if I was there for the event I said no keep in mind that I didn’t know the was an even going on that day since I did the reservation online… well they told me I only get an hour to eat if not they will charge me $20 each person for the event I was shocked and furious they way they told me that my wife wanted to leave but I insisted to stay and try some food well they took us to our tables and while waiting there I just couldn’t take it anymore so I talked to the waiter and told them what happen and that I was just ordering appetizers and some drinks since 1 hour to me wasn’t enough to get a proper meal she went and talked to the manager came back and told me that I get an extra 30 minutes hahaha to make the story short we order some food the ceviche was good the anticuchos were ok the drinks were really good(Manhattan, pisco sour, piña colada) but what we really like was the makis acevichados were realllyyyyy good Waiter was really good we spend about $200 in a hour and 20 minutes hahaha We would be back for the food as long as we don’t cross path with that old man with gray hair dress in all black 🙄🙄🙄 looks he was a manager or owners or something Ohh by the way while we were waiting for our food like about 8-9 people try to get a table but looks like that old man told them the same thing and they left… when we left the place was empty so much...

I had the opportunity to try their Linguini a la Huancaina with Lomo Saltado, which was a true standout with its fresh flavors and perfect balance.
