Really good BBQ ... but slightly pricey. A 1/2 lb. of brisket will run you 15.00. That's what Aaron Franklin charges in Austin ... but even notable BBQ joints (Killen's / Truth) are less than 12.00 a lb. Fortunately, the brisket is really really good ... very moist and nice bark. I especially liked the pork ribs. I'm not a huge fan of a wet rib ... I prefer a dry peppery rub but these ribs were excellent and will likely be the reason I keep coming back. Sausage was good as well ... they only sold jalapeno sausage while we there but I believe that's what most people in Texas order. The burnt-ends were sold out ... which is normal for the time of day we went. If you're not sold out of burnt-ends early in the day, then you're probably doing something wrong. The coleslaw was average ... I don't often run into spectacular coleslaw unless it's a vinegar based recipe (no mayo) but all my friends wrinkle their faces when I try to explain this to them. Last, but certainly not least, the sweet potato casserole is unbelievable. I love BBQ but I also like a good selection of sides and the sweet potato casserole was a definite winner. My post from 2016: BBQ Godfather recently relocated their food truck operation to Bernie's Backyard in Spring, TX. The special on this day was their Pork Belly BLT, so we ordered one, plus a pound of brisket and three spareribs to share, and a side of their Bacon Mac 'n Cheese. Visually, the Pork Belly BLT was a nice composition. We had a little trouble with the texture of the pork belly, which we anticipated would have that balance of fat and crispiness you find on a perfectly-seared piece. This was a little dry and tough, and both smoke and seasoning was a bit lacking. As an overall sandwich though, it has potential. Ribs were good, and I found the brisket to be decent as well. As thick as the slices were, it could have used some additional time on the pit to break down connective tissue. The flavor penetration, from rub or smoke, wasn't quite there either. But it was a beautiful cut and I will definitely be back to give this brisket...

Not a ton of bark or smoke. I'm just more of a fan of brisket that passes the pull test and Central Texas style BBQ. Burnt ends were fantastic and we'll executed.
