Update I've been to this location a couple times afterward and service hads been better.
Original I Was invited here to celebrate big day for someone, it was my first time here in this location, been to the denver one once and the Greeley several times.
I ordered the usual go to when hungry amd hit the spot, Molcajete Marinero.
This is fairly new location, I had been looking fwd to trying it since im frequently in the area.
Lets start with the positives.
The location is clean being new and has bit more parking than the other 2 locations ive been to.
The staff at least our waitress was excellent and did everything she could have to accomadate us very friendly and timely. She was a lady wish would have gotten her name to give her credit.
The atmosphere was good with music as noted for Sundays and the band played quite well besides few minor details to keep in mind or improve at.
Cons
Lack of Consistency with other locations. If im ordering a dish By exact same name as other locations as far as ingredients im expecting the same ingredients perhaps slight differences in flavor due to cooks. The Marinero as soon as I received it in appearance alone was lacking. The minor, the toasted tortilla it comes with suppose to be crunchy as a tostada it was not the case on any of the molcajetes out of 4 the 3 others cielo mar y tierra.
It was lacking food as i mentioned and being that seafood is not filling. I knew wasnt getting moneys worth. For any $15 + dish I would assume anyone would expect to be more than enough and be satisfied with the amount specially for $20+ dish. Mentiomed and brought to attention to waitress had no fish and she said it had no fish in menu She was right as they only have 1 menu for all locations online during this covid period but I have photos to prove ive had it in other 2 locations and was better value for the portions being more plentiful. Charge a couple dollars more of needed.
Fish is the cheapest of the ingredients they are using and the most filling why not just provide it and have satisfied returning customers;remove the scallops if needed(dont recall if it was scallops it has in addition), it also had but a tiny piece of octopus.
The music, while I get the whole ambiance and enjoy live entertainment, there must be better consistent sound levels and quality control when it comes to the sound. The musicians sang and played well;however initially the levels were a bit high and bit distorted but eventually grew on me mlre the longee was in there. Initially i though maybe it was the quiality of equipment. However as was exiting noticed they had many qsc items and those should be sounding much better than they did, their volumes were over saturated and were causing bit of distortion. Quality is better than extreme output and much more enjoyable. Perhaps could employ a decibel meter for all bands and have that level be the threshhold for all bands besides ensuring the systems are better tuned.
The other molcajetes and torre de mariscos were tad too hot, all in party eat somewhat hot at least more than most people but the spiciness was just too much,even though they said portions were right I thought they were also lacking with way too much sauce and 2 large pepers and other non meat ingredients as fillers. Mybmolcajete only had queso ranchero amd nlt the melting kind.
I wanted to give lower rating but not trying to bash them, simply encourage to improve and make changes as necessary, Thorton really neded a place like this and hope and wish them a long successful run striving to improve as needed.

Read moreso this used to be my favorite spot but idk what happened with the chef cause the food was awful. i tasted everything and just took the rest home to throw away. the sushi rolls were a hot mess the rice wasn't even rice it was like a rubber tofu. i ordered oysters preparadas and they weren't fresh at all. the shrimp was overcooked and the pico was not made with fresh veggies. The waitress was in such a hurry to get us out of there she gave us one menu to share and no drink menu just said we have beer and margaritas, when we asked for the drink menu. Then when we are going to pay the gratuity had been added and she was trying to get us to scroll pass and add more tip ended up paying $156.00 for food i did not enjoy and a rude entitled waitress.im so sad now i have to find a new spot. The only thing i liked was the margarita in a bucket oh n my man ordered the fried calmari it was the best tasting thing we had. Literally the best I’ve had — cold, spicy, salty, and just right.
The atmosphere feels like a beachside spot in Mexico — laid back, colorful, with good music and even better vibes. The staff was so kind and made us feel right at home. You can tell this place is run by people who love what they do.
