Mr. Collins makes some tasty 'cue. It definitely doesn't look like much on the outside but that's a good thing. No flashy signs or anything like that. As soon as you open the door, you know you're at the right place. Nothing fancy inside either but there's no need for that. You might question my rating for the atmosphere, but it's because of Mr. Collins. The smell of barbecue hits you. I wish I had more time to eat more but I had prior plans & only had time for a sandwich. Got myself the beef (brisket) sandwich. It comes on 2 slices of white bread with only a little sauce. I don't like when they put on too much sauce because you can't taste the flavor of the smoke or meat. It was was super tender. Of course he wouldn't share his secrets to his brisket, but I had to ask. Unfortunately I'm from NYC, but if I'm ever back in Waco I'll definitely try to stop by to try his other food. My husband and I just got married last weekend and we took my folks (visiting from China) to Waco since it’s where we met (as Baylor students). So I decided to feed them with some decent Texan BBQ and we came here again. Papa B literally recognized me soon after we walked in and he even kept the receipt from last June with our name and number on it! We were so surprised! The prices are very inexpensive compared to other barbecue places probably because this is a locally owned mom-and-pop barbeque place.
