Ippudo Saigon: A Deliciously Solid, if Not Speedy, Ramen Experience (4 Stars)
I recently visited Ippudo in Saigon and had a good overall experience, though it wasn't quite as spectacular as I've had at other Ippudo locations.
The Good:
Flavors on Point: Both the pork bun and Ramen Zero were delicious. The pork bun was a standout, with perfect melt-in-your-mouth pork and a flavorful combination of sauces. The Ramen Zero was exactly what you'd expect from a classic ramen: rich, garlicky broth, perfectly cooked noodles, and tender pork. Quality Ingredients: The quality of the ingredients was excellent, fresh, and flavorful. No complaints here!
Room for Improvement:
Service: While not bad, the service wasn't particularly memorable. It would have been nice to have a bit more attentiveness and enthusiasm. Wait Times: The food took longer to arrive than at other Ippudo locations I've visited. This could be due to factors beyond the restaurant's control, but it's worth noting for those expecting a quick meal. Missing Zing: While the pork bun was nearly perfect, a touch of acidity or crunch could have elevated it further. The Ramen Zero, although delicious, might lack excitement for some who prefer more complex flavor profiles.
Overall:
Ippudo Saigon delivers a solid, delicious ramen experience with high-quality ingredients. However, the slightly slower service and lack of extra oomph in some dishes prevent it from reaching the heights of other Ippudo branches. I recommend it for a good, reliable ramen fix, but manage your expectations and consider exploring other options if you're seeking a truly mind-blowing ramen...

Food was okay. But a little below Ippudo standards at other international locations.
First, they need to allow customers to choose the type of noodles they want. Some customers prefer the thin & straight noodles, others prefer wavy.
And secondly, need to allow customers to choose noodle firmness. From soft, to medium, to firm.
Our gyoza did not come with enough sauce. They should make gyoza sauce available on the table so customers can add more if needed. Or provide a deeper sauce dish.
Also, the drinks have an oily film floating at the surface when they are delivered to your table. This is something other reviews above mine have also noticed.
Today there was also a lot of construction dust entering the restaurant from the building next door. So it was very difficult for not only us, but also other customers in the store to enjoy their meal. Everyone was coughing because of it.
Ippudo did seat customers upstairs only, to avoid the dust as much as possible. And they did have some fans blowing the dust out, but it was still an uncomfortable experience and hard for customers to breathe. This is not their fault though. Hopefully the construction can use plastic covers on the door of the building when working, so concrete and silica does not bother any neighboring businesses.

We visited in the evening and encountered a bit of a snag with the ordering process. Instead of being handed menus, we were directed to scan a QR code to browse the menu and place our order online. Unfortunately, the website glitched when we tried to submit our order, so we ended up requesting physical menus and ordering in person. This took more time than we would have liked—it would have been easier just to use the menus from the start.
We each ordered a bowl of ramen along with some dumpling and fried chicken on the side. The food was good, but lack of meat. For 130,000 vnđ, we expected to get more meat than 2 pieces. And extra 2 slides of meat cost 57,000 vnd. Customers will pay for everything extra even like sprouts, onions, cabbage,… One suggestion would be to allow customers to swap out toppings at no extra cost.
