As someone who brews specialty coffee daily, I wanted to try one while on vacation in Vietnam. Saw the amount of great reviews, so I thought I'd give this a try. I have to say that the exterior and interior of the cafe has a nice minimalist and contemporary design that makes it feel high-end.
The staff was friendly and did their best to speak english with us to explain their pourover menu - each coffee had their own card. We ordered 3 different coffees with the most expensive one aroud 25 CAD.
I started to become skeptical once I saw they were using a cheap grinder that made inconsistent fines. The smell of the grains was very subtle but I thought I'd give them the benefit of doubt.
The moment our barista started brewing, I knew we just got scammed. I won't say what gave it away (in case they read and adjust their process) but for those who drink specialty coffee, you'll know. Brew time was over 4 minutes so the coffee was heavily over extracted and flavours were indistinguishiably muddy.
Our barista used 100 degree water for all 3 coffees and then gave us an explanation why that made absolutely no sense. He didn't leave the whole time we were drinking then asked for a google review several times as well as our instagrams.
I have a feeling their coffee beans are not specialty beans at all. I am impressed at how closely they are able to replicate a specialty cafe but it is extremely frustrating to new and old coffee consumers coming to Vietnam.
