I come from a REALLY small town where we'd drive 5-8 miles just to reach the nearest gas station. Their was a family that owned their own cattle along with their own slaughterhouse/butcher shop. Moving to the greater DFW area I wasn't sure where to buy fresh meat as all of the supermarkets nearby are terrible and there's no HEB up here. When I first tried stopping in, it was the day before Father's day and they were PACKED! (Just shows how much love the community has for them.) I wasn't in any particular need to buy meat, I simply stopped by as a recommendation from a friend. I decided to stop by another day and give it a go on a normal business day.
When I went in today it was between 4pm and 5pm so I was able to stop in before people arrived after getting off from work. I walked in and noticed the "Please take a Number" sign that is used during busier times of the day. I walked up to the counter and a sweet lady asked what she could help me with. I asked for something simple to try out, just a pound of ground chuck. As she walked me over to the right-counter where the ground beef was at gentleman appeared from the back and asked how he could help me as well as he didn't see I was already being helped. It was nice that everyone was attentive to my presence and wanted to help, I really appreciate that!. When she and walked over to the ground beef she said "Can I offer you ground round instead of chuck for the same price?" I hadn't noticed yet because I was too busy being mesmerized by all the fresh cuts of meat in the vicinity, I must've had a slightly confused expression on my face at the question as just when I noticed the tray was empty she said "Or we can ground you some real quick if you'd prefer." Realizing the situation I agreed to the substitution for the 'better' ground beef (for what I planned to use it for) not because it was offered at the same price but simply because everyone was so nice and I simply didn't want to cause anyone to go through the trouble of grinding a single pound of meat just for me lol.
The gentleman at the register was also really nice and pleasant. When he rung up my meat he said "That will be five hundred and thirty four cents. How does that sound?" Everything about this place reminds me of the small community I came from. Everyone was really kind, happy to assist and seemed to love being there ready to help; Can't ask for more than a shop that provides excellent service and takes pride in it.
The meat and cheese on display along with the aroma of the shop made me salivate. I noticed they also sold many different kinds of wood for smoking along with a great selection of spices and cheeses. If you live in the area or are passing though I'd definitely recommend stopping by. Some of the meats were expensive, such as the absolutely beautiful slabs of Wagyu brisket, while the rest was very competitive. If you stop by when they are packed, don't feel overwhelmed, just walk up to the center counter in the front and take a number and they will call on you when it's your turn in-line.
Bonus: I asked about customer grinds of meat consisting of chuck and brisket and was told they'd be happy to do so. The only caveat, which is reasonable of course, is that you'd have to buy the whole brisket and they'd add the requested ratio of chuck/round. She said they could even package it in one-pound increments for me. I absolutely love it! I'll definitely be coming back for any and all future meat purchases.

Love this cute hole in wall butcher shop. I feel like I’m back in New York City and Los Angeles. They can customize your meats, make plenty of their own fresh sausages, jerky etc.
The staffs very knowledgeable as I’m always asking questions about my meats and they always help me and give me confidence on how to make the best steak, how to cook the sausages, how to make the most memorable rib roast, HA!
Recently came here Xmas eve to pick up a rib roast. 8 lbs at about $177. I know that’s expensive but believe me, it was worth it!!! The meat was perfectly marbled with fat through out (not just the top). The butcher cut out the ribs for me and prepared it for me to cook. Compared to Costco and central market where we’ve bought and had our prime rib roast, HANDS DOWN THEIR MEAT IS PHENOMENAL! Our family of 4 ate through the first 4 lbs the first night and saving the other 4 for New Years! I’m drooling just thinking of having this again! Yummmm!

Read moreIn the past I was a regular customer of Hirsch's Meat Market. My last visit Hirsch WAS NOT that wonderful. I noticed an employee was watching me from the moment I entered the store and made a point of waiting till I approached him, then turn and walked away. Another employee saw me but didn't approached to ask if he could help me. When another customer walk in the store, he asked if he could help. Bear in mind, at the time, there was only 2 customers (me included) & 5 employees waiting. Both of the employees were male. They have waited on me in the past with no problem. A female employee did help me and was very friendly. The check out cashier was a female and very friendly. I don't know if Jerry realized that some of his employees were being selective. I would like to think the 2 men were having a bad day and it's not because I am Asian. I've been in this country all my life. I've never been to China and did not bring in CoVid-19. Jerry, you may need to have an employee meeting. The next customer just might report you to the BBB and the City of Plano. It's too bad. Hirsch's product is superior and I think it's worth the money.
