This is one of the finest Hotel Management Institutes in India. This was made possible by Late Mr Belfield Smith and Late Miss. Thangam E .Philip who was Principal of this Catering College for several years. Late Mr Smith was an expert from FAO and who was hired by Govt. of India to introduce Hotel Management Education in India, under the Ministry of Food and Agriculture. Presently the great educationist Dr N Srivastava is the Principal of this prestigious institute who was earlier Principal of IHM ( Jammu & Kashmir). Once Ms. Philip had retired, Mr K V Simon had taken over the reign of administration in this college. He had made revolutionary changes during his tenure as Principal. He also believed in austerity and professionalism. Mr K V Simon had stuck to his deep-rooted principles of integrity, sincerity and he abided by all the rules of State and Central Government. We had excellent Faculties like Mr. P. N. Raman( He was in charge of Food Production, Bakery & Confectionery), Mr late Timothy G Ayre (HOD - F & B), (Dr Sucy Eapen ( HOD , Dietetics) , Mr Mathen Philip ( He was heading ATK), Late Mr Eziekel ( ATK), Late Mr K H Shalia ( Accounts & Management),Mr Nambiar ( Bakery & Confctionery), Late Mrs. Shanta Deocole( Quantity Foods), Mr Ismay Gomes ( Food & Beverage - Services) who was an excellent teacher in Services( who was trained abroad) and also served as Principal for a short stint, Mr Kartar Singh from Fisheries Science, Mangalore, Mr Patil ( an astute professional) who was also Hostel Warden - both in Canning & Food Preservation, Mrs. Bose ( a true French teacher) to teach French, to name a few. If any name( s) missing, my apologies! Self also remembers with lots of reverence about past visiting Faculties like: Dr ( Brigadier) Pennathur who was a great authority in Work Study and Late Mr Pesi Shaw who was technical director of Fariyas Hotel, Colaba. The college building is pretty old but she stands erect with her past glory and academic excellence. The college has separate Boys' hostel and Girls' hostel in the campus, itself. Plus a beautiful Staff Quarters for the senior Teaching Staff. The Principal's bungalow is beautiful, too, abutting the walls of the college. The college is well - equipped and has the following: A/ Advanced Training Kitchen( ATK). B/ Quantity Foods Kitchen. C/ Two Basic Training Kitchens. D/ A spacious Bakery & Confectionery dept. Earlier there was an Experimental Kitchen with facility for removing a farinograph( Farina is a Latin word, meaning = Flour). Gluten Index test shall be most ideal to test Gluten strength in a dough. It could determine the strength of flour and percentage of Gluten which gives elasticity to the dough). There was large Caféteria earlier and now it has been reduced to a small coffee shop - with coffee - vending machines in order to economise on operating costs. The Principal ( Dr N Srivastava) has introduced many viable reforms to reduce the operational costs. The college awards B Sc and M Sc in Hotel administration. The students are well - fed as I had personally eaten food from their lunch buffet a few months back during our visit to the college on an invitation from the present Principal. The college is doing extremely well under the stewardship of Dr N Srivastava. I want to pay my heartfelt tributes to Miss.late Thangam E.Philip, Late Mr T G Ayre, late Mr K H Shalia, late Mr Eziekel, late Mrs Deocole and an ex - student of this college Late Mr Jagat Verma who was Executive Chef at Bombay Taj and he had retired as Senior VP from Tajmahal hotel,and later he was CEO at Essel World, Gorai, Mumbai and was leading a quiet life in Pune after his retirement. He was my trailblazer & well-wisher,too! We had tour of the institute, granted by the Principal.
