The Adler really is truly remarkable hotel. It’s more like a luxury cruise liner than regular hotel. You could realistically book a week here and never have to leave the hotel – such is the breadth of activities on offer. Of course that would be a great mistake as Ortisei is one of the prettiest small towns in the region. A short walk and a mountain gondola ride away, is the spectacular panorama of the UNESCO World Natural Heritage area – Alpe di Siusi. We’ve seen this awesome (literally) panorama in both winter and summer and it still manages to take our breath away.||The hotel manages to tastefully integrate Tyrolean charm, with Italian style. The public areas are a delight on the eye and very comfortable indeed. Our room (204) was immaculate. I genuinely could not fault one single aspect; it was all so well designed and easy to use. It goes without saying that all the things you would expect from a room in a hotel of this calibre (such as toiletries) were included.||Meals were generally excellent with one notable exception which I will come to later. Buffet choices (simply salads or desserts) were expansive. When there was a special buffet evening, (such as the fish and the local speciality evenings) the choices were astonishing. The phrase “spoiled for choice” could have been written to describe these evenings. This especially applied to the range of bread products at breakfast. We have never (and I do mean never) seen such an array of different types of fresh bread. In November of last year, we stayed at a five star establishment in Florence and I was mightily impressed. I have to tell you that it didn’t come close to what is on offer at the Adler. The same goes for every aspect of the food at the Adler – choice and quality are the bywords. Not to mention the excellent (and very reasonably priced) wine list. Considering the amount of covers this hotel deals with (it’s not exactly a small hotel) the kitchen performed spectacularly well. We did not have a single disappointing meal…apart from our first.||On our first night, the staff dealing with our part of the dining room (everyone was absolutely first class) advised us to check out the fish buffet before considering our later options. This was wise advice, as the buffet was simply breath-taking. I have never seen so much seafood in one place – and top quality stuff at that. So I didn’t pay much attention to what was to follow and ordered the vegetarian Lasagne with crispy Cavolo Nero. I’m sorry to say this was the worst pasta dish I have ever eaten. The sheets of fresh pasta had collapsed to form a thick, two centimetre block of stodge, topped with some crispy cabbage – genuinely awful. That lasagne – thankfully – was not typical. For the rest of the week we dined like royalty, with a special mention to the dessert team, who delivered visually amusing, utterly delicious endings to all of our meals.||The skills of the dessert team were also on display at the afternoon dessert buffet. Every day I promised myself no more apple strudel and cake, I wanted to go to dinner feeling genuinely hungry but as that delicious display of baked goods, emerged – my self-discipline just evaporated.||Last but not least I must compliment the staff throughout the hotel. They were the very model of warm professionalism. The food was outstanding. Every meal felt like a gourmet experience, with fresh, local, and seasonal ingredients beautifully prepared and presented. The breakfast buffet was abundant and full of healthy choices, while dinner offered a variety of high-quality dishes, always served with care and attention.
Our room was spacious, quiet, and perfectly clean, with a private balcony offering breathtaking views of the mountains. The bed was incredibly comfortable, and every detail — from the lighting to the layout — was designed with comfort and serenity in mind.
What truly sets ADLER apart, though, is the staff. Every team member we interacted with was warm, professional, and genuinely attentive. Whether it was at the front desk, in the dining room, or at the spa, we felt valued and well taken care of at every step.
We also appreciated the variety of included activities — guided hikes, fitness classes, yoga sessions, and e-biking made it easy to stay active while still feeling like we were on vacation. It’s the perfect place to reset your body and mind.
We honestly can’t think of a single negative. Our time at ADLER Spa Resort DOLOMITI exceeded every expectation. It was a perfect blend of luxury, nature, wellness, and heartfelt hospitality. We’re already dreaming about our next visit.

Read moreA true historic gem hotel that almost perfectly mixes traditional vibes and architectural elements with top notch modern facilities!|The grounds and gardens are immaculate and beautiful.|All the pools and spa facilities were overall very clean and inviting especially the newer areas.|Food is of high quality and flavour.|Complementary electric bikes were the best I've seen.|Although this is clearly a family resort it never gets loud or with too much children given the space of the grounds. Overall it was super relaxing and tranquil.|In summary it is a really amazing place to relax in saunas, heated pools, and have great food at the footsteps of Seceda and Alpe di Siusi, in the heart of Dolomites.|It is truly an example of how a top level resort should improve and age appropriately over time. ||However, as always, there are some negatives/ points to improve:|- restaurant ergonomics: most of the chairs are too high for the table which becomes uncomfortable after a while. I would change the chairs for newer and lower sitting position. |- adult sauna area: there is a sewer smell in the showers of this area, mostly after usage. I would put essential oil burners at the relax zone for better aroma and feeling. I also would like more privacy in this area, for instance the whirlpool/sauna pool is not confortable to be nude as it is so much exposed.|- "afternoon cake buffet": most of the cakes are really amazing!! But perhaps they should include yogurts or more healthy options.|- I would encourage a non smoker vibe in the hotel and remove the ashtrays in lounge chairs and garden tables.|- the gym would benefit more ventilation; sometimes gets a little "smelly" and not pleasant. This is more important as it also serves as a hallway to the hotel further area so many people passes by.|- rooms: renovated rooms are great and I think they really did an amazing job at the bathroom. I have only two criticisms, first I would like to have more lightning in the room (too dark for me) and secondly I would like the curtains to fully darken the outside light but unfortunately some lights passes underneath at night and early daylight promptly woke me up everyday.|- salt grotto should be free (with...
