Best ever. I drive north for about 45 minutes just to talk to them, learn and buy from them, about cuts I haven't been able to get anywhere. Beef Cheeks, Hanger Steak, Bavette, and the list goes on. Great service. Great knowledge. I've brought at least 5 meat-loving friends in and said "you have to see this place". And for good reason. They all make trips there because it is that great. And I've butchered my own meat for 28 years, and these guys are way, way above my experience.
OK, an edit. Just did their Sausage making course. Fantastic. Three professional butchers, 4 types of sausage that 12 of us amateurs made. I did a small Sous Chef experience with a top Toronto Restaurant, I own a Big Green Egg, a Treager and an offset Oklahoma Joe smoker. I'm a gas grill in the kitchen over inferred. Why, well, I tell you this because I love food.
When my wife goes bonkers over the Maple Mustard sausage and then the Toulouse (she spent 2 years in France), and says....
"it's the texture, it's the flavour, it rocks, we are buying our sausages from Hind Quarter from now on".

Top quality meat, top quality staff, top quality service, top quality knowledge and top quality innovation. The Toulouse, hmmmm, tough to call but it was above the Maple Mustard imho.

Delicious cooked on the grill. We will be back to try the dry aged steaks. On our next trip to HQ we ordered the steak sandwich (to share) for take out. This was the absolute best sandwich we have ever had. The steak was nicely seasoned and the flavor of the roasted Poblano peppers and crispy onions along with the tenderness of the steak on the poppy seeded bun was outstanding.
