This guy clearly hates Argentina and everything/everyone from that country. We started the "asados season" (10 families, 7 from Argentina, 3 from ROLatam). Some years ago I talked with this butcher and it was clear that he hated my argentinean accent, the way he described some "cortes". One of my friends from ROLatam more recently had the same experience but from his comments. Then I told him, NEVER BUY THERE. No one should buy where the guy who's responsible for the meat that will be eaten by a family is such a hater. I know you've got lot of clients. Good for you. We are now more than 30 people, reaching 40 sooner than later, most of us IT professionals, so weekly, we can afford what you'd propose, and remember, we calculate between 500 and 750grs per adult, we are not like you, Mr 250 fat included. The meats are really unassuming, in the shop. My expectations were so-so when buying the product.
Handling it once home though, it was obvious that this was a pretty decent product. Pretty sure they use real casing - or if it's casein, it's a really high quality one. Was still carefully pessimistic due to bad experiences with previous butchers in the city.
Then when I started cooking em, they got mouth-wateringly juicy - basically self-basting, really.
