this veritable BURST of flavour was the best thing i had at the ningxia night market. i ordered the salted egg yolk one, and the golden sauce OOZED out. it was very salty, savoury, and had kind of a cheesy taste maybe??? it packed SUCH punch, especially with the crispiness of the perfectly-fried scallion pancake. these strong flavours were complemented by basil mixed in with the egg — it provided an herby sweetness and reminded me a bit of pesto. since it IS fried, it’s a lot more airy and flaky compared to a regular scallion pancake, which is usually thick and chewy. but seriously get the salted egg yolk, the sauce that she lathered on was so amazingly addicting and i want it on...

I lined up at 8:20pm on a Thursday. Aside from the original flavor they also have, salted egg yolk, bbq sauce, double cheese with condensed milk, smoked chicken with basil and ginger pork.
