Raphio Chocolate — Local services in Fresno

Raphio Chocolate has become a "must visit" when we're near Fresno. I strongly suggest the tour. The "factory" is a fairly small space in a strip mall, but if anything that makes the tour experience even that much cooler, because even though they're working with 150 lb sacks of chocolate beans, being able to see each stage of the roasting, grinding, aging and tempering of the beans in batches not much larger than you could do in your home kitchen is super neat.

And the tasting, with all of the different flavors of the different regions of chocolates, is really cool.

Yes, you can buy one of each bar and sit and taste them at home, but having been through the process (and the wonderful smells of the different stages of processing!) and standing around with friends on the tour talking about how each origin tastes distinct really enhances...

This is the best chocolate I have ever tasted in my life. Don't expect to find the same quality in any grocery stores. The chocolate here is done without fillers like vegetable oil or corn syrup. Check out their tour where they explain to you their process. Their chocolate is fresh and both very potent and complex in flavor. I highly recommend the 72% bars of Madagascar (more on the fruity/acidic side) and Ghana (more bitter). My wife enjoyed the latte and I enjoyed the drinking chocolate, however, I wished it was a little more chocolate versus milk. They also offer a sipping chocolate with only a touch of milk, which I should have opted for instead. Updating my review: We haven't been able to get over here in a long time but I swung by today and true to form, they did not disappoint. Delicious coffee, chocolate milk for the little, warm fresh baked cookies and decadent gelato for the hubby. I desperately needed a little self care today and this hit the mark perfectly. Go check them out. I promise you won't be disappointed.
