I raise high quality Wagyu Beef. I've used Carson's for over 10 years. They do a good job. First,they slaughter the animal with a single bullet to the head. It's immediately dead ... the animal is hanging out chewing grass one second and dead the next. They immediately cut it up and it's hanging in their refrigerated trailer in 20 minutes. There's No chasing or hauling the poor animal. This alone makes carson meats worth it. They also do a good job of aging , cut and wrapping the meat. I emphasis good, not perfect... but as good as anyone else I've tried. Are they going to trim your steaks to the exact specifications? No but they are acceptable. In other words They blow through the cutting process like every other meat processor in Utah. .. Probably because they have to make a profit. Let's face it The tight arse people in Utah county don't want to pay what it would cost to trim meat so its 100 percent ready to use for say fajitas. I personally would pay a little more for this, but that's subjective anyway. They are good at removing bone etc... their hamburger is great. Lamb steaks or fajita meat etc... might need a little bit of trimming before you cook it. That's expected. Basically trim your own pieces after you thaw them out and be glad there's a mobile butcher...

I recently picked up a 1/2 grass-fed beef share (first-time bulk beef customer) and was not informed that the price per lb that was advertised is based on hanging weight and is subject to change SIGNIFICANTLY. At the time I purchased the share, it was NOT stated anywhere on their marketing material and website that the advertised price is based on hanging weight and the final price is subject to change. After having a long talk with them, they have only recently added those caveats to said materials. After reviewing several other local beef suppliers' websites, which all very clearly state that the final price is subject to change, I don't understand why it was never stated on Mosida Market's website. Very frustrating.
The final packaged weight I ended up with was 210 lbs, only 55% of the 380 lbs I "purchased".
The final take home price was ~$8.60/lb, which is almost double the $4.75/lb that was advertised.
The head butcher said that the typical take-home yield from hanging weight is about ~50%, so I would recommend you DOUBLE whatever the advertised price is to get you close to your actual take-home...
Read moreI remember when this place was Carson‘s a small family owned business that knew what customer service meant. Unfortunately since the new owners took over, it feels like a giant corporation bought out another small family own business and have instilled their same practices and don’t really care about customer service. For example, we can’t even order ground beef. They’re out of cows. They’re very rarely stocked up on items that are requested. I spend hundreds of dollars a month there and yet somehow was told no discount could be given. For dog food. I wish Carson‘s never sold. I’m sad that they even asked me to leave them a review because they’re not deserving of one. A little discount goes a long ways especially for someone spending so much money couldn’t even get an answer from the manager like I said, they don’t know what customer services is or don’t care , it’s just some corporation that just bought out a family owned business. The only reason why I continue to go there because the meat is better quality than at the grocery store. I just wish there was another butcher...
