My taste buds were delightfully, shocked at Bird Creek tasting room. Barley whiskeys made with ancient, heritage and heirloom barley growing in the wondrous valleys and prairies of Washington and Oregon. Best is always local in my book.
Mark whiskey steward / owneg set me up a 6-flight. Nose notes, sip, swish swish and swallow - wait for the bite in the throat. I’m not very sophisticated at tasting, but I know what I like and I know how I want sizzle sizzle thrill-izle on my gums permeating thousands of bulbulous linings on mu mouth and tongue - then like a rocket bursting in flames from the launch pad blazing down into space, my throat. Ah! Houston, we have whiskey lift off - particularly the purple Egyptian was fire!
Cool the distiller is native American owned - love to our native friends who here thousands and thousands years before the white man. Bird Creek whiskey’s taste great exceeding my expect-taste-ins! The barley is clean, salmon safe and pesticide free, some whiskeys will be certified organic in the future
Baronese German heritage only grown in Washington. The purple Egyptian is an ancient grain 7000 years old. I thought I could smell the field when I stuck my nose in the glass. It’s grassy. Full pint single cast and small batch full pint were great - yet the purple Egyptian (originally from middle East, Caspian Sea region traveled to Egypt to make beer) delivered a floral fruity and caramelized sweet taste with a shot of spice. Ah!
Master whiskey mind and owner, Mark, took me on a journey of the grains and whiskey tastes, but I gotta be honest after sipping 7 whiskeys it was all a taste bud blur but for sure I knew I wanted a bottle of the purple Egyptian to go!
By the way, I discovered this whiskey shopping the PSU farmers market. Bird Creek had a little booth set up and although in the morning I’m not ready for whiskey I had to give it a try. The fire and the spice hit me delightfully. And I knew I had to get over to the tasting room. Been there done that and wanna be there do that again.

My partner is a big fan of whiskey and this spot looked small but interesting. Our group of four had some issues with scheduling and arrived slightly late, but the owner was both understanding and very kind. He kept the tasting for us even though almost every other place in town was closed for snow! Once the four of us were settled in he kicked things off and I just felt so special. It was a lovely, intimate experience. I don’t drink much whiskey but I enjoyed the explanations of the distilling process and the flavors, I loved the company’s story, and my partner had a really great time.
