What makes me drive out so far from home to the beachside burb of Chelsea? Exceptional Pizza off-course! Once upon a time the farthest I'd travel was Mordialloc - but this PIZZA is worth the extra 15 minutes. Lets start with the dough. It's allowed to sit for 38 to 72 hours - just like quality sourdough. The cheeses are organic and fresh. That awful shredded salami on the base does not exist here - only $40+ p/kg deli options such as Sopressa or other imported salami. The other ingredients such as olives, peppers, mushrooms (and much more) - are chosen absolutely fresh and laid on an organic home style tomato base (or other complementary base depending on the pizza). I had the pleasure of quickly consuming a 'Chicken Garlic Mushroom' and 'The Lot' - but this delectable pizza was too good to put down. So I ordered some more! Next came the 'Turkish Sujuk' which disappeared in seconds. This has to be in the top 10 pizza list - close to 8 I believe.
