The guys at Vacation are doing the right thing. The aesthetic is on point, drifting away from the tried and true combination of tile, timber and concrete. Their customer service is neither disingenuous nor pretentious , however, being primed on the corner of Flinders and Exhibition Streets, there is no time for it - especially with density of competition in the neighbourhood.
Coffee is excellent. However take it with a grain of salt as black coffee is my forte. Therefore, my taste buds will not be as sensitive to the milk variants. They do have batch brew filter coffee on tap which is great.
In the Patisserie field, they cover a small selection that satisfies your basic requirements. Their ham and cheese toasted croissant is on point; smoky ham, rounded cheese, crispy exterior with a soft and chewy interior.
