The rating is only for the taste and texture of the Roggenvollkornbrot, not of the place itself, nor other products. This bread is very far from being a good rye bread; dry, boring, poorly developed, tasteless (except for the misplaced caraway seeds). I'd say back to the drawing board with the recipe.
The owner(s) may be quite arrogant in thinking that their creations are impeccable, and critique has no place, if judging by their unprofessional, feelings driven reply. I would recommend them to visit Copenhagen or even Oslo (illebrød) to taste awesome artisan sourdough whole grain rye bread.
