The "Susuru Classic" would taste quite a lot better with a Katsuobushi (鰹節) aroma oil. In my humble opinion, leave an option to choose your aroma oil at this premium of a price. The broth is too mild. Too heavy on the Tare (垂れ), too light on the aroma oil. The Chashu doesn't taste great. Potentially, braise it then roast it if that's not the current method of cooking it. Quite frankly, the prices are a rip-off. 17 euros for a bowl of one of the most mediocre bowls of ramen I've ever tasted in my life is stupidly overpriced. The music is quite good; they play j-pop anime openings/endings for the most part. The seating, furniture, and cutlery are great. The owner is a nice man, to be fair. I hope he will listen to my suggestion, or even contact me for help if he so desires. However, I will give this restaurant 2 stars based on the subpar taste...

I had takoyaki as a side dish which was okay. The ramen itself is a little complicated. I had the classic. Egg was perfectly cooked and I can tell there's effort being put on preparing the pork chashu. However, the broth wasn't rich enough for me which I consider the most important part of a good ramen. I also prefer my broth thicker, but that's my personal taste.
While I liked the cozy Japanese feel of the interior, some parts don't seem particularily hygienic, such as the little spice bottles that felt sticky. I normally don't pay attention to such things, but I felt the place could use a cleanup.

The ramen was very tasty, slightly on the salty side but that could be due to the addition of some spicy mince I chose as an extra. The broth is good but not as creamy, rich and savory as I had it with other tonkotsu in the past. The noodles were too soft for my liking and lacked a chew. The chashu was definitely a highlight though: thinly cut it almost melts in your mouth.
