Fish ball starter - came out cool much more than fryer hot. Which could be perfection, and can be dicey for seafood temp… but this isn’t just fish in da ball. Check it. Comes with cream sauce, light and fresh. Hot sauce was delicious. Each ball was cooked exactly like the next. Delicious fish and conch, veggy, and filling you up textures and taste.

Have to try: Absolute best hand cut fries ever. Better than the base of your favorite ski hill, better than your dirtiest, debauchery roadhouse, and certainly better than the most positive politically positioned french fry acclaim in Capitol Cities. If you do not wish to pass go, stop at the french fries. You will find yourself in heaven instead of jail. Seriously, if you don’t know how hard it is to make the perfect fry, stay in Cali bruh shorty.

For the main, chicken in vegetable evening delight. Cauliflower: if you don’t know already than you just might never - it’s the tabula rasa of cuisine; Best respect! 🫡 Complemented with zucchini, carrots, and of course, pumpkin (why not), it’s going to be difficult to get to the heart of this dish. Que the mushrooms, oh, the mushrooms! And yes, once you get there, to the heart of lightness you’re not going to want to leave. (Privately saying to yourself, “you better Belize it!”you know you are!). The chicken is the most amazingly perfectly cooked, prepared, and seasoned texture of moisture flavor… the definition is outstanding. There is a thoughtfully thin slice of carbs for those who can’t resist the love and temptation to get along the diabetes train. Oh, and true to hominid hypocrisy, I requested the cacao short rib sauce on me chicken dish. And they didn’t throw us out.

I just had my wedding "weekend" at Blu Zen Resort last Saturday (July 2, 2022). We had several guests arrive up to a week early with us, and the majority of the big group arrived Wednesday and left Sunday. We hosted a Welcome Party Wednesday night catered by their on-site restaurant Lotus by Habanero, then Karaoke at the Lotus pool bar Thursday night, and just had an amazing time throughout our stay. I began working with the Restaurant Owner Darren a few months prior to sort out all the food & beverage needs. The resort was breathtaking and the staff at Lotus and the Pool bar were all great and friendly! The food at Lotus was the BEST of any other place I ate at during this trip (including at our 5-star honeymoon resort we traveled to after the wedding!). Blu Zen is considered an "upscale resort" so this is NOT where you're going to find a cheap basic stay or cheap cuisine. The resort and restaurant are technically separate entities from eachother but they collaborated really seamlessly together.

The day of our wedding we had the outskirts of a hurricane storm down on us and the Wedding Planner (Signature Belize Weddings) along with Blu Zen team and Lotus staff all banded together to flip our gorgeous outdoor reception into a safe indoor reception in their Nirvana Penthouse Suite. Almost 100 guests stuffed up there lol but no one cared because everything was still beautiful, food was delicious, and music was great! What a treat on the island! We walked by so many times and the music was always nice and chairs always full! Finally we stopped and we are so glad we did! We didn't have reservations, which I highly recommend, but were seated immediately at a nice little table for two! Our servers were very attentive and surprisingly for the island our food was served quickly and in perfect timing!

We started with the Queso Fundido because I've been craving cheese! It's mostly cheese sauces here so the thought of melted cheese had drooling! It was piping hot and delicious! The bottom half is meat and veggies and the top half is gooey melted cheese! We then had a sushi roll and it was perfect, although quite spicy! We could have, and should have, stopped there but we each had an entree too! I had the Cacao Whiskey Short Ribs and hubby had the pork chop. Absolutely superb! The rib melted in my mouth, the potatoes were crispy on the outside and fluffy on the inside. The flavor of the short rib was sweet and savory with a caramelized finish, to die for!! The pork chop was cooked to perfection and cut easily with a butter knife. Hands down the best meal we've had in Caye Caulker!

The live music was light and so easy to listen to and still talk over. He sang all different genres with an island twist to everything making sure we didn't forget where we were! Highly recommended and a must experience when...
