Irish red ale 5,1% ibu 17 this beer is a great pride here at siboire. This is the result of a unique partnership with the general association of students in engineering (ageg) of the university of sherbrooke. Brewed at siboire with the help of one of their technical groups, sherbroue, this irish red ale is an absolutely academic! The outcome of such rigorous work is this succulent ruby hinted coloured beer with a hop aroma and rich flavours of caramel.
Trip D'automne Iii
Tripel belgian 7% ibu 28 a proud descendant of trip d'automne i and ii that were brewed in our basement; this is our take on a trappist beer. This tripel has a perfect balance in terms of bitterness, alcohol and levels of malt.

I visited the bar with my wife and three of our best friends. It was the first time we'd all been out together since the start of the pandemic, so I was ready to have a good time and truly indulge.

I started off with a pint of Trip d'Automne, soon followed by the Mac&Cheese. Man, that Mac&Cheese was so good I must've shoveled it in a little too quickly for my digestive system. While my stomach did its best to break down the food in my alimentary canal, I decided to have another beer, the Double IPA.

After we had all finished our meals and drunk our beers, we said goodbye. The night was over, but truly it was only the beginning. That Mac&Cheese had other plans for me.

Let me add that I have a sensitive stomach. Most of my meals consist of plain and simple ingredients. If I eat a potato, it is lightly buttered. If I eat pasta, it is garnished with a sprinkling of salt and a dab of olive oil. So you can imagine how that super rich, creamy, cheese-heavy Mac&Cheese wreaked havoc once I returned home.

I will spare you the details, but I will mention that there were two visits to the washroom, each lasting a good 15 minutes, and more than one orifice involved.

Despite this unpleasantness, I woke up the next morning feeling refreshed and thirsty. It won't be long before I return to Siboire again. Only this time I will accompany my beer with the most plain item on the menu: Bol de...

Having lived in Le Plateau since 2014, I’ve seen many spots come and go, but Siboire Saint-Laurent has remained a staple for craft beer lovers.

The location is unbeatable—right across from a city park, with large windows and an industrial-chic vibe that makes you feel right at home.

The beer selection here is exceptional. With 16 taps and a rotating lineup, there’s always something new to try, from classic stouts to crisp lagers and even great non-alcoholic options.

The staff are knowledgeable and genuinely passionate about their brews, always ready to help you find your next favorite pint.

The ambiance is energetic and cozy, whether you’re inside at the bar or outside on the terrace. It’s a great spot for everything from a quick afternoon beer to a group outing or a casual dinner with friends.

Unhealthy Food and Poor Hygiene We recently visited this bar and ordered the fish and chips. Despite looking appetizing, the meal was a complete disappointment. The fish pieces were tiny, wrapped in a massive amount of dough, and fried in what seemed like overused oil—it had a distinct battery taste. But the worst part was the hygiene. After my first bite, I found a long black hair mixed in with the fish and chips. It was utterly disgusting. Based on what I experienced, I dread to think about the conditions in their kitchen. the food is far from healthy. I noticed some people ordering this dish for their children, but I wouldn't recommend it—the fish was drenched in oil. I strongly advise against eating here for both health and hygiene reasons. There are much better options out there

It was our first time and it's a perfect place for drinking quality beer, we went the IPA week and all the beers were delicious. We decided to grab something for eat, and the food was good but I think the beers are so much better, we took the hamburger and we were surprised they don't have beef option. The pork was not bad but for sure you can find better place for eating an hamburger. the fish and chips they were so much better than the hamburger. But for sure the best was the service, we had Mark for waiter and he was the best: so nice and helpful! He made our first time so much better. All his recommendations were the best. For sure it's an amazing place for quality beer. Four stars because I think the food can be better.
