COA is the kind of bar that doesn’t just serve drinks—it redefines what a cocktail can be. Rooted in deep respect for agave spirits and driven by fearless creativity, COA delivers one of the most memorable bar experiences in the world. With standout cocktails like the BLOODY “BEEF” MARIA (SPICY), Pepper Smash, and Mole Negron, the bar proves again and again that flavor, technique, and storytelling can coexist in every pour.
BLOODY “BEEF” MARIA (SPICY) is a bold, savory revelation. Forget the tired brunch Bloody Mary—this is a drink with serious edge. Clarified tomato gives it a crystal-clear appearance, but don’t be fooled—it’s packed with deep umami and bright acidity. The beef stock adds richness and body, while the mezcal provides that signature smoke. Morita chile and Sichuan pepper work together to deliver layered heat: warm, smoky, tingling, and lasting. It’s not just spicy—it’s complex, structured, and unforgettable.
Pepper Smash is the complete opposite in tone but no less impressive. It’s bright, fresh, and herbaceous, with yellow bell pepper taking the spotlight in a way that’s both unexpected and delightful. The shiso adds an aromatic lift, while jalapeño and acid-adjusted pineapple bring a sweet-tart, spicy balance that keeps the drink vibrant. Código Blanco lays a clean, elegant agave base, rounded out by the citrus-forward Cointreau and a touch of agave syrup for harmony. The sweet basil adds a final green, garden-fresh finish. It’s vegetal, zesty, and dangerously easy to drink.
Mole Negron is where COA’s depth really shines—a moody, spirit-forward riff on the Negroni that swaps gin for Tapatio Reposado, bringing in earthy agave warmth and gentle oak. The vermouth blend is rich and bittersweet, while the Campari provides that classic bite. But it’s the cacao husk and poblano that take it to another level—adding bitterness, spice, and a subtle smokiness reminiscent of mole without being heavy. It’s elegant, dark, and intellectual—like a Negroni that’s traveled, read a few books, and come back a bit wiser.
Service at COA is precise and warm—staff who are passionate about what they serve and more than happy to share the story behind every ingredient and technique. The atmosphere strikes a perfect balance between understated and electric; it’s the kind of place you can lose time in, just sipping and soaking in the craft.
Five stars, full stop. COA is a benchmark—both for agave-focused bars and for cocktail culture globally. Every visit is a masterclass in what it means to respect tradition while daring to...

Read moreAmazing cocktails however the lady managing the queue was extremely unprofessional.
We were there in late Feb, 2 pax, waited in line before the bar opened and got on the waitlist, we were #1 on the waitlist so we stood around to wait. Asked the lady if we could sit by the steps to have some drinks but she said no, drinks outside will only start at 7pm. Fine with us, we sat outside to wait.
However at 6.30pm, there were other ppl who came by to get on the waitlist and she let them sit outside to order their drinks and even brought cushions out for them to sit on. I went up to ask what’s happening and she said she felt that the time was right so she let them order their drinks and sit outside, completely ignoring the fact that we were sat there as well. Was also told to join the “outside queue” which was already long if I wanted to order drinks….
Around 6.45pm, there were people leaving and I saw a vacant table. The lady was typing away on her phone and calling ppl on the “waitlist” but I did not get any call at all. I went up to ask if that was our table as we were #1 on the waitlist but she said that table is reserved for someone else?? If this is a walk in bar, shouldn’t it follow the waitlist according? I asked her if we were still #1 on the waitlist and she said yes, then later offered the table to us “out of goodwill” after she couldn’t explain herself.
It really wasn’t a nice feeling at all as we didn’t ask for any special favours/treatment whatsoever. We did what we were told to do, joined the queue and waited in line but was still treated unfairly.
Would have given it zero stars if not for the drinks. Service wise inside the bar was exceptional and it made our experience a lot better but it still doesn’t override how we were treated by the lady...
