Fantastic Restaurant with Great Vegan Options!

I recently visited Ferment restaurant, and I must say it was an outstanding experience. The owner was incredibly friendly and welcoming, which added to the overall positive atmosphere. The food at Ferment was of exceptional quality and absolutely delicious. Each dish was crafted with great care, and the flavors were simply outstanding.

One aspect that truly impressed me was the restaurant's dedication to providing excellent vegan options. As a vegan myself, it can sometimes be challenging to find restaurants that cater to my dietary preferences without compromising on taste. However, Ferment went above and beyond with their vegan offerings. The flavors and textures of the vegan dishes were on par with the non-vegan options, if not better.

The cozy ambiance of Ferment made the dining experience even more enjoyable. The decor was tasteful, creating a warm and inviting atmosphere that made me feel right at home. It's the perfect place to unwind and enjoy a meal with friends or family.

Overall, I highly recommend Ferment to anyone looking for a remarkable dining experience. The friendly owner, high-quality and delicious food, and cozy setting make it an exceptional choice. This is not traditional Asian food, but it is crazy good food, made by people that obviously know their way around in the kitchen, the Asian cuisine as well as international cuisine in general.

The food is phenomenal, very balanced and yet never the same. Very simple at first sight, but very well made, with the odd twist of something not so simple (often something fermented).

Whether you order a main dish and a beer, or go full monty on their tasting menu, you will have a proper, meal that will make you wish for more, without needing it - if you need more ask for it, and you will be served with a smile.

Owner and chef vividly and very happily will tell you what you're eating and how it's made. And, if possible timewise, always find time and enjoy to a talk about different techniques, sake and stories of the area.

The owner and his wife is the primal force of the place, and I will dare to say that you will have to look very thoroughly for people more invested in a restaurant, more pleasant and casual company than these two.

Jeg havde virkelig glædet mig til at komme på Ferment, da jeg har rejst i Japan og savner maden! Forretterne er gode, men særligt de vegetariske gyoza smager kun af gulerødder, hvilket ærgrer mig, da man kunne gøre så meget mere ud af dem, og jeg har spist mange vegetariske gyoza, både i Kina og Japan. Der går noget galt, så min makker ikke får en rigtig hovedret. Vi er i tvivl om hvem der ikke har været klar i mælet, men der er to okse tataki på menuen, både som forret og hovedret, men vi er dog sikre på at der bliver sagt ”okse tataki som hovedret”. De vil nu lave retten rigtigt (skønt!), og jeg har fået min hovedret, som er ramen, men der mangler et æg, som er ret vigtigt for retten. Jeg spørger om der ikke mangler et æg, hvortil kokken svarer ”Jo!” og vender prompte om på hælene for at gå tilbage i køkkenet, uden at sige noget om hvad der så sker. Jeg venter på min makker, da jeg ikke synes at hun skal spise alene, og jeg venter også lidt på hvad der sker med det der æg, som tydeligt mangler. Min ramen bliver koldere og koldere, hvor vi tænker at det er fordi de er ved at lave en helt ny omgang, da jeg jo er der for at spise SAMMEN med min veninde. Så får vi begge en omgang pocheret æg med katsuobushi på i en sauce på soya med beskeden ”Værsgo, det er til mens I venter”, så vi spiser det – stadig meget i tvivl om hvad der egentligt skal ske. Min makkers ret kommer, og jeg spørger til mit æg, ”men det har jeg jo fået” – jeg er nu snotforvirret. Jeg har aldrig hørt om at man kommer med en ”undskyld”-mellemret og præsenterer den sådan, hvorefter det så går op for mig at de havde tænkt at jeg skulle hælde ”mellemretten” ovenpå min ramen. Jeg synes umiddelbart at det er en fin løsning, men hvorfor siger man det så ikke, i stedet for at servere det som en anden ret. Min veninde får jo også et æg som en ”mellemret”, så hvordan i alverden skulle jeg så forstå at jeg skulle hælde min ret oveni min hovedret. Jeg har heller aldrig fået pocheret æg i ramen før, men hårdkogt æg, skåret i to halve. Det er jo også i virkeligheden ret uhørt ift. generel restaurantpraksis at man skal hælde en ret oveni en anden – det er vel lidt fornærmende nogle steder. Min ramen er nu kold og æg-løs, men jeg spiser det der stadig er godt, men det var en lidt øv-oplevelse. Jeg ved ikke om det var fordi det var en hverdag eller hvad der lige var, men jeg oplevede at kommunikationen var dårlig og jeg fik ikke det ud af oplevelsen, som jeg havde håbet. Jeg havde virkelig glædet mig, og jeg vil da også gerne give dem et forsøg mere, men det bliver ikke sådan lige med det samme, for jeg synes at det var noget rod. Jeg fik ikke lov til at se det, som jeg havde hørt, at restauranten kunne, og min veninde sad også tilbage og var lidt småflov over at hun havde foreslået det. Det kan godt være at jeg skulle have ”slået i bordet” ift. forvirringen og den kolde ramen, men et allerede dårligt restaurantbesøg bliver ikke bedre af at man skal til at diskutere med personalet. De skal have credit for at gøre noget for det japanske køkken og der var glimtvis noget i maden, der kunne være godt, men jeg manglede noget smag – mit besøg var bare...

The plates were bursting with flavour and were paired with delicious sake. Served and cooked by the owner, you couldn't ask for a better service. After the meal, the owner sat with us and we spent a few hours listening to wonderful music, swapping tales and enjoying what I have become accustomed to to in Danish culture, which is incredible hosting. We will return!

A truly hidden gem! Had a fantastic evening here full of new unexpected flavours made by a talented chef who also seems to run the place. He knows a lot about ingredients and food in general, every dish was creative, yet so carefully thought through and we truly enjoyed every bite. An extremely stylish interior and unique atmosphere are definitely a plus!! We had kimchi, gyozas, fermented mushrooms (so good!!), ramen and sashimi selection and loved everything! Can definitely recommend this restaurant for everyone who wants to try something new and not just basic typical things that every other place in Copenhagen has. Can't wait to come back for the tasting menu!

A truly hidden gem! Had a fantastic evening here full of new unexpected flavours made by a talented chef who also seems to run the place. He knows a lot about ingredients and food in general, every dish was creative, yet so carefully thought through and we truly enjoyed every bite. An extremely stylish interior and unique atmosphere are definitely a plus!! We had kimchi, gyozas, fermented mushrooms (so good!!), ramen and sashimi selection and loved everything!
