Hart — Restaurant in Copenhagen Municipality

I visited Hart as the last stop on my little solo bakery tour in Copenhagen—after JUNO, Andersen & Maillard, and Det Rene Brød. I got there around 1pm and stood in front of the display cabinet for a while, just trying to figure out what to get. (Travelling solo means I have no one to ask “what are you getting?”!)

At the other bakeries, the staff were all super warm—smiling, checking in if I was ready in a sweet tone. So maybe I was a bit spoiled.

Here, it felt a little more… rushed. I ordered a salmon sandwich and a Spandauer, and although I had said it was to go, I was given a sandwich from the cabinet (already cut) without any check-in or question. I actually saw a fresh, uncut one being taken out just before, so I was a bit surprised. I didn’t say anything though—I was tired (sun rises at 4am??), a bit low on sleep, and honestly not super confident with English in the moment.

Maybe that’s how they do it here—and the food was still nice! But the service just didn’t quite match the vibe of the space, and compared to the other places, the contrast stood out.

Rarely have I encountered more service-minded, empathetic and considerate staff. The team manage to balance a poised confidence in their high-quality products with a down-to-earth, personable affability that makes customers feel at home, from the moment they step in the door, to the moment they roll themselves out, stuffed to the teeth with chocolate croissants, shaking uncontrollably from the three cups of delicious jet-black filter coffee I've gulped like a thirst-shrivelled desert-wanderer arriving finally and with grateful relief at a remote oasis that unexpectedly resembles a delightfully-crispy Spandauer pastry filled decadently with a giant wodge of vanilla custard — where was I? Oh, yes, Hart. I like the cheesecake. Their sparkling water is...

Super bad experience 10 minutes ago. I went for a pastry and cappuccino. The lady making coffees made a super liquid cappuccino (to have it there ate the table) which splitter everywhere. Instead of just remaking it she gave it to me. I tried to carry it at the table but it was impossible so I asked for a new one.

She was not happy about that but of course she accepted. Not enough, she made me waiting 10 full minutes to have the new one and made me uncomfortable questions just to make me feel bad about that instead of just apologizing and make the new one.

The only super bad experience in Copenaghen so far. I have loved HART in Copenaghen but I would not go back...
