This restaurant has tasty red meat! I’m from Kobe, Japan, where melting-on-the-tongue Kobe beef is very famous, so I’m not usually curious about eating beef in Paris. However, I love beef steaks in this restaurant, because I can feel the real taste of red meat and very delicious. At the same time the dish is not costly. I went to the restaurant Saturday lunch time and the tables were full, but the garçon was gentle and attentive. Many table had thier birthday events, which showed this restaurant is loved by local people. The chef seems to know how to handle beef in the right manners. Beside beef steaks, other side dish was also amusing my tongue. For example whipped cream on a piece of dessert cake was what I had never tasted; citrus taste but different from lemons. (passion fruits later discovered). All the trimmings were full of chef’s ideas.

Truly special restaurant - one of the best cote de beouf i’ve ever had, with original and delicious starters and desserts. Especially the tomato and burrata salad - would have never thought of adding peaches and grapefruit, and it was delicious. I had dinner at Vertus by chance as it was nearby my hotel and had excellent reviews. The experience was superb! I ordered the special which came with 5 courses. All of them were absolutely delicious. The wine was also excellent. The service was very good despite the language barrier. Our server was very welcoming, and helpful. At the end of the dinner the chef came out to greet us. He was very humble as we congratulated him on a job well done. Definitely recommend this gem to anyone in Paris, you will not be disappointed!!

Truly special restaurant - one of the best cote de beouf i’ve ever had, with original and delicious starters and desserts. Especially the tomato and burrata salad - would have never thought of adding peaches and grapefruit, and it was delicious. Lors de mon dernier passage à Paris, j’ai eu la chance de dîner au restaurant Vertus, situé rue d’Aguesseau, avec mon fils. Nous avons opté pour le menu et avons vécu une expérience culinaire extraordinaire, unique en son genre.

Dès les premières bouchées, il était évident que le chef a un talent exceptionnel, digne d’une étoile Michelin. Les viandes sont sublimées, travaillées avec un soin et une maîtrise rares, offrant des saveurs inégalées. Chaque plat est une véritable œuvre d’art, à la fois visuelle et gustative.

Le service, quant à lui, est incomparable. L’équipe est attentive, chaleureuse et d’un professionnalisme irréprochable, rendant chaque instant du repas encore plus agréable.

Ce restaurant est véritablement un joyau et s’impose comme mon premier choix à chaque visite à Paris. Une expérience à ne surtout pas manquer pour tous les amateurs de viande, de gastronomie haut de gamme et de vins exceptionnels. Bravo à toute l’équipe du Vertus pour cette soirée mémorable !

During my last visit to Paris, I had the pleasure of dining at Restaurant Vertus, located on Rue d’Aguesseau, with my son. We chose the set menu and experienced something truly extraordinary and unique.

From the very first bite, it was clear that the chef possesses exceptional talent, fully deserving of a Michelin star. The meats are perfectly crafted, elevated with care and expertise, offering unmatched flavors. Every dish is a true work of art, both visually and in taste.

The service is equally unparalleled. The team is attentive, warm, and impeccably professional, making every moment of the meal even more enjoyable. On top of that, the wine selection was exceptional, perfectly complementing each course.

Vertus fait parti de ces restaurants dans lesquels on passe un bon moment, ou la salle est agréable et la cuisine est bonne et le service est agréable, mais dans lesquels on ne retournera jamais;

Nous somme en présence d'un restaurant à formule "unique", en réalité il y en a deux, basé sur une bonne viande autour de laquelle on aura une petite entrée et un accompagnement (ça ne va pas sans rappeler un "relais de l'entrecôte", "Beefbar" ...), . De ce coté là, rien à dire la viande est bonne, le restaurant fait le boulot.

La carte des vins est bien fournie, il y a du choix, mais les prix grimpent vite. Pour l'apéritif par contre c'est un peu triste, 2 bières et quelques alcools sur glace. L'entrée unique et les deux desserts proposés, sont travaillés et même si ils sont simples, font très bonne impression.

Mais le diable se cache dans les détails : l'accompagnement arrive et la quantité pour la table entière est à peine celle servie pour une personne chez la concurrence; de même la "fameuse sauce" qui a fait le succès du "relais" ou les "3 frites" qui font le plaisir du "coin d'Alexandre", ce détail qui fera de la viande un plat inoubliable, n'existe pas ici.

Là où le bât blesse, c'est la nature même de ce type de restaurant : à titre personnel, quand je vais manger une côte de bœuf, ce n'est ni un choix diététique, ni de la grande gastronomie. J'aime la bonne viande, et je m'attends à un repas copieux. Or chez "Vertus", on ne sait pas trop ou se situer. Sans un dessert, un supplément de garniture et plusieurs corbeilles de pain, on sortirait du restaurant en ayant encore faim !

Si on ajoute à cela un prix élevé par rapport à la concurrence (69€, dessert et boissons en supplément), l'éloignement de Paris et des transport, la difficulté à se garer dans le quartier, et le fait d'avoir fait l'intégralité de la carte en un repas on comprendra pourquoi "Vertus" ne mérite qu'un...
