I am speechless. I’ve been to this restaurant on multiple occasions and every single time the food just tastes even better than the last. Each dish is beautifully plated and extremely flavourful. There are two extremely different but popular dishes you must try from the menu. They are the “Oeuf 64° truffes champignons” & the Cassoulet. The first dish is definitely meant for any truffle lovers it’s so light and delicious and of course has the great flavour of the fresh truffle. The second dish is a hardier meal and it is a specialty of this region in France so A LOT of restaurants serve cassoulet but I need to say that it is made the best here. I love this place so much that I am glad I got the chance to take some friends who visited from the US to eat here and they were just blown away by the quality and taste of the food. We had enjoyed our two previous dinners in Carcassonne and saved what we thought might be the best for last. With a most unfriendly greeting we were placed at an undesirable table with no contact with the three staff who seemed confused and unhappy. We asked pleasantly if we might be seated elsewhere and told all tables were reserved even though the restaurant was far from full. This was not a polite or understanding response but one that seemed rude and arrogant. We determined at that point to leave and were able to make a late reservation at another restaurant where we enjoyed the hospitality and wonderful food we have experienced in France over the past 3 weeks. We did not have one dish we were enthousiastic about, nothing surprising or new and interesting taste combinations. The service was not the best either, the waiters don't seem to be professionals and lack of generous hospitality that we are used to in fine dining restaurants. The waiter did not explain what we are eating and this was strange as well. Not to speak about the cheap furniture inside but this is not so important as the quality of the meals of course.
