I reserved this restaurant for my husband's birthday. We chose the vegetarian menu for two people with wine pairing for 4 dishes (1 entry + 3 main dishes). With a starter wine and optional truffle addition, we paid 280 euros for the whole dinner. Overall, the experience was okay, but unfortunately, it may not be the restaurant that I would recommend to my friends, especially for a special occasion. The positive notes, though, are that they have magnificent desserts. Both the pre-dessert and the main dessert were very original and delicious. Also, the selection of the wine was also pleasantly surprising - very nice. It is also appreciated that they offer a vegetarian option, which is also the reason why we chose this restaurant, as it is not always the case in this type of restaurant (restaurant gastronomique). Now, speaking of the food, while the price can be acceptable for the menu itself, the level of main dishes could've been higher (They were all good, but considering the price, you have an expected level, compared to other restaurants with the lower/same price.). In general, we were satisfied with what we had and at the end of the meal, we were full (the quantity was well calculated!). One thing I would like to mention though, is that they unfortunately chose to have an open kitchen, and I saw that one of the cooks touched their cellphone (another staff was also helping filming) in the middle of service, which was shocking to me, to be honest. Also, another thing that I was a bit disappointed is that towards the end of the service (there were only three tables that night and two other tables next to us did not yet receive their pre-dessert/dessert.), the kitchen staff started cleaning and arranging the kitchen and turning off the light, etc. I understand that they would like to do so when their work is done, but having an open kitchen and still having their clients at the table, it does not give a great experience... especially when you selected carefully a restaurant for a special night and pay a good amount of money (for most of people!). You can also choose to be on the first floor where you do not see the kitchen, though. But just as a note, when we asked about being placed on the first floor when we first entered the restaurant, the staff told us that it may not be super great because there are toilets on the same floor, which made me ask myself why then they have tables on that floor... I tried to take positive things since it was for a good occasion, but I would hardly recommend this restaurant for someone who search for a place for their special day. While I didn't go to any of the San Pellegrino/Michelin mainstays in Paris, I can say with some degree of confidence that they may not have been as intellectually engaging as everything I saw and tasted at Dessance. Located in a fairly casual space in the Marais area of Paris, the restaurant strips away pretense and provides a meal that stands up to any critique.
To appreciate Dessance requires one to first understand its story and its concept, borne out of the mind of a dessert pastry chef. The goal of Dessance is not to provide a meal that is full fat and meat heavy, but utilize the delicate touch and balance learned from dessert/pastry and apply them to a full menu that includes savory items. The focus is less on proteins, but more on the flavors and textures of fruits, vegetables and herbs. These are all welcome departures after meals consisting of foie gras and cheese all over France.
I came in at lunch as a party of 1 and they sat me at the counter where I had the privilege of seeing each dish plated and presented. I had the Hedonist menu which included savory and sweet bites that are pictured. Some memorable moments included the use of salsify three ways in a mushroom dish, shiso + blue cheese, pretzels + lemon confit, smoked walnut shells + veal, etc etc. Very inspired.
