This place is a 1:1 replica of KazuNori in Los Angeles—down to the pencils, the paper, and the entire ordering system. I’m not sure if it’s an official franchise or just heavily inspired, but the similarities are impossible to miss.
That said, while the concept is spot on, the execution isn’t quite there yet. The restaurant just opened, so I’m hopeful they’ll refine things over time. The fish is clearly nice quality, and they’re generous with the portions, which is great. However, the balance isn’t quite right—the fish is often too cold against the warm rice, which takes away from the delicate texture that makes hand rolls truly exceptional. This is especially noticeable with the crab roll, which lacks that melt-in-your-mouth experience you get from the best hand rolls.
