So. Amazing! This translates to Three times the spice. And do they mean it!
Perfect on a cold, December Paris day. It's really about the spice and heat here so prepare for your taste buds to get whopping doses of miso, chili, sesame, garlic, ginger, and pepper.
I had the potstickers (ravioli) with sichuan sauce and the dry dan dan (ramen) noodles. The pork in the potstickers was garlicky and gingery, while the sauce was spiced but not too hot. Nice chewy texture of the dough complemented the flavorful meatball inside.
The dan dan noodle was DELICIOUS. First, when you order, you choose a spice level of 0 to 5. I wanted to start at three but the waitress cautioned me it might be too much. I love spice and heat but I've also learned that as a westerner, eastern levels of spice far supercedes what we typically think of as hot in the western world. I've been burned before... get it... so I heeded her advice. I should have stuck to 3 or even gone to 4 in this instance but starting at 2 was a good baseline for my first time. I didn't find it too spicy. I can definitely handle more.
Second, the ramen noodles are made on site and are AMAZING and DELICIOUS. They had the perfect toothiness, meaning al dente. Once you toss the noodles with the pork, peanuts, cabbage, green onions and the spicy miso sauce at the bottom, be ready for delicious noodle bites one after the other!

   Read moreI always enjoy spots where Parisians will actually line up themselves to see what they're into right now. Paris has a little bit of a Sichuan noodle game, but objectively, the noodles are only okay. The French don't really eat spicy food, and so I can see the uniqueness of this spot. They did well on the vibe and the simplicity of the menu. If I lived here, I'd come back, but not because of the noodles. The item that IS worth a trip are the ravioli à la sauce sichuanaise (dumplings with Sichuan sauce). Delicious.
As far as spiciness levels go, the wait staff here is trained to always warn you and try to talk you down a level. I'm sure it's better to be safe than have an angry customer who can't finish their noodles and doesn't want to pay. I originally ordered a 3 but the waitress convinced me to order a level 2. After that experience, I think that I could have stuck with 3. I really think the scale is conservative for the French, and so if you really like spicy food, 2 is a safe bet, and 3 is probably what you're seeking.
Sidenote for New Yorkers visiting: this place will make you realize how lucky you are to have Very Fresh Noodles and Xi'an Famous Foods, both places with thick cut hand pulled noodles and more "numbing" spice flavors, as opposed to just...

Service is really slow, however the place is not packed.
Food...i would not call it food for human beings that they serve there (fill up a tank there would be more convenient choice)... We ordered a veggie and beef soup with moderated and hot version. What we got is : noodles soaked in OIL. When finally the waitress come over I told her that something was wrong with the quantity of oil in the soup. She said : oh you asked it spicy, it means spicy oil... For me spicy is not equal to 1 liter of oil in the soup to make it spicy ! Am I lost in translation : spicy, oily ? I traveled a lot in Asia and i ate lot of (really) spicy soups but I have never seen something like that before. So if you want to hurt your stomach, having 1 liter of oil for dinner with veggies and noodles go for it, but if you go to a petrol station and soak your noodles in oil, it would be pretty much the same thing. Not to mention the paper bag within you get your "food" ... But at least it was diet friendly - i did not have anything for dinner in 3 fois plus...
