I've been visiting Fuga (mostly during winter time) for about a decade. Last dinner was by far the worst experience ever. Something has changed for the worst in the past few years but I don't know what this is.
Food was great with the exception of dumplings (extremely thick dough and a blunt taste in general). No complaint there.
The main problem was the concert going on just in front of us, we could barely hear our friends or even our waiter (he had to bend down his ear to our mouth just to be able to listen). This is totally unacceptable and we should have been warned when booking. Not to mention hundreds of people with beers, snacks, barefooted yelling for about 2 hours just a couple of meters away.
The head waiter (in sharp contrast with all other personnel) was rude, ironic and arrogant. His behavior was not suitable for any restaurant, let alone one with such a great reputation and a cost of 80 EUR/person (without dessert). At the same time he was ignorant, trying to convince us of things he obviously had no clue (like Moshofilero being a rose wine variety, almost mocking us for trying to order a white wine...).
Lastly, I believe they should reconsider the portion sizes. For 22 EUR per dish, it was a very unpleasant surprise to receive maybe 60-70gr of meat (4 tiny lamb chops with the bone), without any side dish and cold. 第一印象真的奇差無比,因為我們是團客,但許多人被安排在兩張桌子的中間,桌子併再一起並不平整,可以看到上菜後的盤子有一半懸空著。 我在猜也許是我們的飛機延誤,導致晚入場,餐廳要調整桌椅。若是如此,我認為應該要提早打聲招呼,告知我們此事,我們都可以理解,也自知晚到理虧,能夠配合(以上只是我的猜測)。 但現場的狀況是,服務生的臉都很嚴肅很臭、面無表情,沒有笑容無妨,但倒水的時候,灑出來杯子非常的多,但沒有一聲抱歉、也放置不管。直到看到我一直在拍照和錄影(我純粹是要拍攝家族旅遊vlog),服務人員看到我在拍攝,才走過來擦桌子。為什麼我可以拍到照片?就是因為他們看到我拍才來擦。一直到上菜前感覺都很差。
本來想要給一星,但因為前菜、麵包奶油、主餐、甜點都非常好吃,用餐環境也舒服舒適,所以還是平衡報導,要來用餐是推薦的,餐點確實有點值得這個價位。唯獨是給我和家人的感受不好。我是非常非常少給低於五顆星的評論者,這次來了米其林一星餐廳、自然會對方方面面有要求跟期待。

The first impression was, frankly, terrible. We were part of a tour group, and several of us were seated in between two unevenly joined tables—so uneven that once the dishes arrived, some plates were literally half-suspended in the air.
I suspect, perhaps, that our flight delay caused us to arrive late and the restaurant had to adjust the seating arrangement last-minute. If that was the case, I think a simple heads-up would’ve gone a long way. We fully understand that we arrived late and would have been more than happy to cooperate. (Of course, this is just my guess.)
What made things worse was the demeanor of the staff. They looked serious and cold, with no expressions at all. That’s fine—even without a smile—but when water was poured and spilled on several cups, no one apologized or cleaned it up. It was only when they noticed I was filming and taking photos (for a family travel vlog) that someone finally came over to wipe the table. And in fact, the only reason I managed to capture a photo of the dirty table is because they saw me filming and only then came over to clean it.
Up until the dishes were served, the experience felt quite unpleasant.
I originally considered giving a 1-star rating. However, the food itself was excellent—the appetizers, bread and butter, main course, and dessert were all absolutely delicious. The dining environment was also very comfortable and pleasant. So to be fair, I still recommend dining here. The food quality does justify the price. It’s just that the overall service experience left a bad impression on both me and my family.
I’m someone who very rarely gives below 5 stars, but for a Michelin-starred restaurant, naturally, expectations are higher in every aspect.

As soon as we arrived the terrace doors where open and fires lit - such a phenominal first impression. The view of the gardens beyond was stunning at night. Then there was the gorgeous wines (sold by the bottle) that perfectly complimented each dish.
