Excellent Italian food. After being in Paros Greece for a few days, my partner and I were ready for a change from Greek food with Italian food being our favorite choice.
Made a reservation for dinner that night just to be sure we would have the option to eat there. The restaurant sits in a quiet area of the Old Town, this is a nice change from the main square area, which can be loud and busy.
We ordered the Caprese salad for our appetizer, which was very fresh and quite good. For our main meal, my partner ordered the Homemade Rigatini with Genovese Pesto and Burrata. The dish smelled fantastic and he enjoyed the flavors, the pesto is not too strong of a flavor.
I ordered the Cacio e Pepe, prepared fresh outside in the large cheese wheel. The pasta was extremely fresh and the cheese was just amazing. Not too rich, just the right mix of flavors, added the black pepper at the end.

Daniele is the owner of the restaurant as well as the head chef. He also taught the course. He gave us his history and background which was so interesting and inspiring. Extremely professional chef and host. We spent 2 hours cooking and 2 hours eating.
Staying to eat the pasta you make is additional cost but it was well worth the money. We did take the course in the off season so I wouldn’t hold it against him if the course was less relaxed during peak season. Also, there were only 4 of us who signed up for the course. I could imagine class size having an effect on how personal the course is.
I’m a big music fan and the playlist was great. It complimented the atmosphere perfectly.

Totally inappropriate and disrespectful to the host country and local population; this snobbish and élitiste approach to service is unheard of and received as an attempt to exclude Greeks from going. Particularly inappropriate from Italian business people when in their country they insist on speaking only Italian to foreign visitors/ tourists. Waiters were happy to speak French of English but nobody present was able to respond to any customer in Greek. I resent this attitude and I feel deeply insulted to authorities who allowed such and approach to local business. We are selling ourselves and our dignity for a seasonal looting...
