Pizzeria Acqua e Farina — Restaurant in Bologna

I was passing by Acqua e Farina last Saturday on way to dinner elsewhere and my friend needed to use the bathroom. We stopped and she went in to ask for a coffee. The pizzaiolo 1) told her she could use the bathroom and didn't need to purchase anything and 2) pleaded us to try a pizza. We said we were on our way to dinner but he said that he had just opened and would give us a pizza for free as long as we wrote a review.

We were all relatively skeptic but extremely surprised. The pizza was phenomenal. It was thin and crispy and the denser parts of the dough were chewy and airy. The quality of the toppings was also something we all noted. The salad greens were fresh and dressed lightly with a pleasant touch of acid, and the mozzarella was EXTREMELY high quality, very wet and loose, almost burrata like.

Things were a bit hectic when we arrived but when it comes to food and service, our friend really did something here. He also walked us through how he avoids using any form of yeast in hot months via a unique method of grinding high-quality flour and mixing it with boiling water. He went to all ends to show us how this process works as we were very curious. I would definitely eat this pizza regularly.

Pizzeria situata in ottima posizione nel centro di Bologna. Ambiente confortevole ed accogliente, perfetto per passare una serata piacevole con amici e famiglia. Le tempistiche non sono lunghe e gli ingredienti sono accuratamente selezionati e di prima qualità (l’impasto della pizza è eccelso). Prezzi accessibili e bassi considerando i fattori elencati in precedenza (massimo 10€ a pizza). Ottimo servizio condotto da un titolare molto simpatico ed alla mano.
