A Taste of Nature at Osteria Rovescio Nestled in the heart of Bologna, Osteria Rovescio isn’t just a restaurant—it’s a testament to mindful eating. Guided by the rhythm of the land, this biodynamic gem crafts its menu around the seasons, celebrating locally sourced, small-scale ingredients. The warm, rustic interior invites you to pause and savor not only the food but also the philosophy behind it. The staff, attentive without intruding, reflect the same care that goes into every plate, creating an experience that feels genuinely nourishing. My choice of the Pizza Terra, a vegan delight, was a perfect embodiment of this ethos. The crust, made from ancient grains and patiently leavened for 48 hours, was a textural masterpiece: chewy and satisfying on the edges, with a delicate thinness under the toppings. The creamy leek base provided a velvety foundation, harmonizing beautifully with the roasted pumpkin's earthy sweetness and the black cabbage’s gentle bitterness. Finished with seasoned vegetable cheese and a hint of thyme oil, the pizza achieved a balance of flavors that felt inventive yet grounded. For dessert, the Biancomangiare showcased the same level of care—a silken vegan panna cotta paired with tender poached pears and a floral saffron sauce, a combination that lingered in the memory. While the food shone, our shared bottle of al metro, a natural white wine, fell short of expectations, offering little of the complexity that defines the dishes. Yet this minor flaw was easily eclipsed by the convivial atmosphere of the evening. Il Rovescio thrives on its ability to connect diners not only to their food but to the land it comes from, creating a dining experience as thoughtful as it is delicious.

The other dynamic is providing innovative food alongside Bologna's classic dishes. In the pizza department, few could refute that Il Rovescio are doing incredibly well in this department. The toppings are highly imaginative and, furthermore, incredibly tasty. Using vegetable creams and purees is one of their skills. Service as expected was fantastic, and the atmosphere was just perfect for a meal. Everything we had, from a classic margarita to the other more creative pizzas, were sublime. Pricing was highly reasonable. Luca, the manager, has created a cocktail called the Americano. Have one ad an aperitif. Stunning. Desserts, too, did the job nicely. I would probably eat here weekly if I could. Also, I would book too as there were no spare tables and diners were being turned away. Thank you for a wonderful evening.

I really have found not a single lowlight during my visits at the place, probably only portions size might upset the hungriest… Pizzas, meat, wine, pasta, cakes? Try the most you can, all will be above expectations.

Localino tranquillo in via Pietralata, zona Pratello, nel pieno della movida Bolognese fatta per lo più di studenti affamati (e brilli). Ad onor del vero non era la prima volta che capitavamo in zona e mia moglie l'aveva già provato con amiche a pranzo, dandone giudizi più che positivi. Incuriosito anche dalle positive recensioni e da quanto scritto sul sito ci decidiamo a (ri) provare accomodandoci all'esterno cullati da una piacevolissima brezza. L'interno si presenta piccolo ma non angusto, con vistosissime lampade a soffitto (ed ancor più vistosa macchina per l'aria) ed è arricchito alle pareti da mille oggetti in cui, ad una prima occhiata, non trovo una coerenza. Iniziamo con una entree di benvenuto gentilmente offerta dalla casa: daycon con formaggio vegano e germogli di soia dal sapore pungente ma equilibrato nel suo strano abbinamento. Passiamo a gustare due antipasti. La prima scelta è una crema di fave con cicoria e bietola saltate e con scaglie di mandorla dall'innegabile qualità della materia prima, ma decisamente indietro di sale e di aromi, oltre che dalla consistenza troppo secca e un po' slegata dagli altri ingredienti. La seconda portata è una lasagnetta di pane carasau con caprino e pomodori semisecchi, sicuramente meglio riuscita, in cui però la sfoglia era troppo molle e pertanto mancava la croccantezza goduriosa tipica di questo tipo di pane che a mio avviso avrebbe dato quel guizzo in più. Saltiamo i primi (già provati e, a detta di molti, di buona qualità) per passare ad un gyros di cinghiale con patate e contorno di verdure di stagione.....interessante..... almeno nel nome, arrivato un po' troppo velocemente (veloce e non in temperatura è un controsenso). Ci viene presentato un piatto al limite del tiepido, sempre troppo indietro di sale e decisamente non aderente alle aspettative. Verdurine un po' povere, anch'esse tiepidine e senza spinta. Il tutto, "aggiustato" di condimento, riprende vigore e.....e però non può salare tutto il cliente!! Chiudiamo con un caffè Nigiri davvero molto buono. La mia conclusione è che le idee sono buone, idem i prodotti, ma tutto è un po' banalizzato dalla mancanza di coraggio nell'esaltazione dei sapori. Apprezzabile la cucina vegetariana, vegana, gluten free specialmente fatta con prodotti km0, ma non siamo stati completamente soddisfatti del rapporto qualità/prezzo. Non è una bocciatura, attenzione, riproveremo sperando in una giornata di maggiore ispirazione culinaria dello chef. Rimane altresì il rimpianto di non aver scoperto perché si chiama Rovescio, la storia de "si chiamava così già prima" non è molto romantica. Diversamente se rovescio fosse l'inversione citata dal sito sul fatto che è la materia prima a costruire il menù e non il contrario, sarebbe di maggiore pubblicità ed impatto.
