I can't tell you how much this gelato brought me joy during our stay in Bologna. Not overly rich or fake tasting. All of the flavors we had were so fresh and natural. The owner, Alessandro (?), was so passionate about his gelato flavors. He has some signature flavors (crema de Bologna is SO good) as well as rotating flavors. Some flavors he literally only makes one batch and it's gone (the pomegranate! We were so lucky to catch it). We also had kiwi which blew our mind, normally I don't like kiwi but this isn't the green kiwi he reassured us, it's a special Italian kiwi and it was amazing! He really sources special and high quality ingredients for his gelato. He was also very patient and nice when we were being indecisive which was a breathe of fresh air compared to some other gelato shops where the people looked SO annoyed by tourists. Not only did we get to try a bunch of flavors, we learned a lot about gelato and it's history here in Bologna.
As we were enjoying our gelato, the owner came out and gave us a little taste of the just finished batch of marscapone gelato. I mean he didn't have to at all but he is just really nice, joyful and passionate.

The flavours are truly exceptional. You can taste how much effort went into selecting the right flavours and combinations, as some flavour are mind-blowing. My favourite ones are matcha with orange blossom, goldenrod flower, and nasturtium with pepper.
The nasturtium and pepper tastes like how flowery perfume smells, in a very good way. It’s incredibly tasty and the pepper adds a tingling feeling afterwards.
The goldenrod gelato has a hint of bitterness that adds to the complexity of the flavour. It tastes so unique and refreshing.
The matcha with orange blossoms has ruined me. The addition of orange blossoms takes matcha to the next level, and I can’t imagine matcha without it anymore. It was so good that when I’m having a regular matcha now, I crave the flavour of orange blossoms.
I really can’t recommend this place enough if you’re looking for excellent and one-of-a-kind gelato. I’m very sad that I don’t live near this gelato parlour, as I would have been looking so much forward to try new flavours. This is the first place I will return to if I visit...
Read moreAfter having tried so many of "due/tre coni" shops across whole Italy the last years (some deserve it, some not), I can say the following thing: I list Sablé with 6 flavors in my "all time top 10" flavors. And this in my most favorite Italian city that I visit often. Grazie mille. The passion and the clarity in his style of producing gelato is out of this world. Consistency was always top-notch, no ice crystals, pure flavors, clever combinations. Pure passion.
There are just some things that clearly underline that this man has real knowledge. His pistachio gelato is not made of pistachio di Bronte. I have enough of all the people promoting that this is the "real" stuff. Pistachio di Bronte are nice, but absolutely not the best you can get. Try his gelato and you will know why I'm making this point. Only very few can reach this level in pistachio gelato today (some who were able to do it, got worse like Otaleg in Roma). Also simple flavors like milk show that this is not a normal gelateria.
Also great granita. Some of the best I have ever tried (outside of Catania/Messina. Again: perfect consistency (the most important thing for great granita).
