Dal Vinaio – A Taste of Florence in Every Bite
Nestled in the heart of Florence, at Via Vacchereccia, 10r, Dal Vinaio is not just a sandwich shop—it’s an experience, a celebration of flavor, and a tribute to the art of Italian craftsmanship. The moment you step inside, you’re greeted by the rich aroma of freshly baked schiacciata bread, the warmth of a passionate team, and the undeniable charm of true Florentine hospitality.

From the delicate balance of creamy pecorino and truffle spread to the bold, savory notes of locally cured meats, every sandwich tells a story—a story of tradition, passion, and the relentless pursuit of perfection.
One bite into a Dal Vinaio sandwich, and you’re transported. The crunch of the bread, the explosion of flavors, the harmony of textures—it’s not just food; it’s poetry. Whether you’re indulging in a classic Tuscan pairing or a bold new creation, each bite reaffirms why this little shop is one of Florence’s true hidden gems.
The lines may be long, but they move quickly, and trust me, the wait is more than worth it. Because when you finally take that first bite, you’ll understand: this isn’t just a sandwich—it’s an unforgettable moment, a piece of Florence you’ll carry with...
Read moreThis is the most wonderful panini shop in the heart of Florence right next to the Piazza Della Signoria….The paninis are all exceptional and the owner Mateo along with his employees Valeria and Daisy are so friendly, and attentive and passionate about the food they create. We stayed at the Hotel Della Signoria and stumbled across this shop on our first day and it was soooo delicious we literally came back every single day to have a panini for lunch. I will probably never eat a sandwich again without thinking about the La Viola panino or the Cosmo i panino. The focaccia is perfectly soft and flaky and the prosciutto is Devine, the cheeses are exquisite and you must get it pressed/toasted so that it’s warm and melty!!! My mouth is watering just thinking about those amazing paninis. Grazie Mille Dal Vinao!!! Hopefully we will be back soon…on our next visit...
Read moreWe had an apartment across from the shop. Don’t be skeptical of it being mediocre tourist food considering it’s on Piazza Signoria . Though we ate well throughout Firenze, Pisa, and Bologna (including Michelin restaurants) we frequently found ourselves here for a late night snack and bottle of wine. The entire place delivered quality; food, service and variety. I recommend Boia (caramelized onions are perfect addition to the panino), Uffizi, and Troiaione. Nice wine selection for a small shop. They had a morellino di scansano that over delivered for €20-ish. It was insanely hot this week (99-100F) so needed to throw the wine in fridge for a bit to be more at cellar temperature, but that’s not a complaint just a tip for future guests. The owner and his team were very kind, helpful and patient with every guest I observed. I look forward to next years...
